I know you are hanging on the edge of your seat to find out how last night's dinner went.....Well..it went well! The chicken curry was pretty good....not authentic by any means but it was good. I felt weird serving it with brown rice and broccoli ( a no point veggie) but it is what it is. Hubby and I like it and felt satisfied. I guess that's what counts.
So breakfast was the usual. We had company for a late lunch so I snacked on some Progresso light soup before they came over. Usually Saturday mornings entail Spinning class but Hubby decided to golf so the class was a no-go. :( I will go to the gym tomorrow or all hell to pay! :)
We decided to do BBQ: my brother's recipe for Pollo Asado tacos. Basically you take two corn tortillas (that have been heated up with a little oil) and you add some pollo asado, diced white onion, cilantro and Cholula (juice of the Gods) and Voila! Heaven. On the side, some grilled corn, pinto beans and my famous guacamole (Ina Garten's recipe just spiced up a little). Then the best part was dessert....my "Crack Brownies". They are referred to as crack brownies...well because they are addictive like crack (not that I'd know about crack but I can just assume). I make them with the best ever brownie mix: Ghiradelli. Ahhhhhhhhhh.
As you probably figured, I'm out of points for the day and not very hungry so dinner may not happen tonight. I had a few glasses of wine (and none of the crack brownies!) so I think I'm good for now. We'll see. :)
