I made a cup of coffee with almond milk and sugar free caramel syrup right after I woke up. It was nice on a rainy morning. Then I was off to spin class. I hadn't been to a spin class in awhile so it was nice!
When I got back it was breakfast time. I had an English muffin with peanut butter and honey with a side of strawberries. Nothing exciting.
I know I feel better because I spent the rest of the morning cleaning and organizing. I cleaned out closets and drawers. I finished the laundry and put pictures in frames that I've been meaning to do. When lunch rolled around, I was pretty hungry. I really wanted Sammy's Woodfired Pizza's salad again. So we loaded everyone in the car and picked up the salad and a cheese pizza from a pizza place nearby.
1/2 cup butter
1 cup butterscotch chips
2/3 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 cups miniature marshmallows
2 cup semisweet chocolate chips
Directions
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
Using a microwave-safe bowl, melt the butterscotch chips and butter together in the microwave, stirring occasionally until smooth. Set aside to cool.
In a large bowl, stir together the brown sugar, eggs, and vanilla. Mix in the melted butterscotch chips, then the flour, baking powder, and salt until smooth. Stir in the marshmallows and chocolate chips last. Spread the batter evenly into the prepared baking pan.
Bake for 20-25 minutes in preheated oven. Cool, and cut into squares.
They are pretty tasty!!!!
