What a beautiful thing to wake up to AGAIN! It's really nice to see your hard work paying off! Thank you everyone for your kind words!! I love all the support and encouragement I've been receiving!
Breakfast was an old favorite: light wheat English muffin with Barney Butter (how I love thee!) and cantaloupe.
I took the kids to school and went over to Great News for a cooking class. Today's class was shorter and started later so I brought my laptop to Starbucks to catch up on emails/blogs. I had some hot tea and a fruit cup while I was there:
Today's cooking class was entitled Valentine Dining and it was a "lunch" class where you see them cook an entire meal including dessert and you eat it at once instead of little plates of things. Our "lunch" was Smoked Paprika, Sugar and Spice Roasted Salmon with Oranges. There were two sides: Israeli Couscous Risotto with Roasted Peppers and Pine Nuts AND Roasted Asparagus with Tarragon Mustard Vinaigrette:
OMG. This meal was to die for. The salmon was served on orange wedges and it was perfectly cooked and seasoned. Now....for those of you that know me...I do NOT like "fruit with my food." But this was different...the flavors were perfect. The couscous risotto was unreal....I will have to make it very soon. And I loved the vinaigrette on the asparagus. Just when you think it can't get any better.....IT DID.
Layers of Love Chocolate Pecan Caramel Torte with Dulce de Leche ice cream. Heaven. Absolute heaven. Holy cr*p. I have to make this soon.
After all that delightfulness, I went to pick up my son from school and came home and changed for P90X. Today was Yoga day. I enjoyed it today. I'm getting stronger and better at it which makes it more enjoyable. :)
After yoga, it was time for me to come home and change yet again......I had dinner plans with another mom from my daughter's class. We decided to go to Pacifica in Del Mar. I love this restaurant. Normally the view is amazing but not on a cold and rainy night like tonight. Nevertheless, the food and wine were outstanding. They extended their Restaurant Week menu so I went for that. I chose the Grilled White Shrimp for my appetizer. It was served with roasted corn relish, fennel puree, red wine demi and petite basil:

Pacifica and Georges are two of our favorites every time we visit SD.

Yum! That cooking class seems so cool - what a great looking plate! I normally don't like "fruit with my food either" so i'd be interested to try that. Congrats on another day at 135!
