I was craving almond butter first thing this morning. So what better than an almond butter sandwich? With a side of cantaloupe and a hot cup of coffee, it was the perfect Saturday morning breakfast.
After breakfast it was P90X time. Kenpo was the video of the day and I rocked it. I was starving when I came home so I munched on some peanut butter pretzels while I prepared lunch.
So....the moment you've all been waiting for....I used the Joyce Chen Spiral Slicer.
Here are two zucchini that I made into "spaghetti":
I read about a few different methods of preparing my "spaghetti." The first one was to boil the zucchini for a minute and then putting into a water bath and then draining and mixing with your sauce.
This method stunk. Soggy, wet spaghetti is not what I was going for. So I "spiralized" the next two zucchinis and sauteed them for a minute or so in a little olive oil and then added the sauce. MUCH BETTER. I added a little parmesan and it was pretty tasty. So I ate FOUR zucchinis for lunch. I felt full...for about an hour. Then I was starving the rest of the day. I don't know if it was because I only ate vegetables for lunch or because all I did the rest of the day was veg on the couch.
I ended up having some more peanut butter pretzels and when the time seemed appropriate, I busted out the vino:
Since I was still starving, I made a quick salad:
All day I had a Weight Watcher recipe for slow cooker beef stroganoff in the slow cooker. I am a HUGE fan of beef stroganoff....but I really like the real deal. So I was already a little unsure of this ground beef concoction that was cooking away.
I ate it on whole wheat egg noodles. Verdict: bland and boring. Ugh. Now what do I do with the leftovers? I hate wasting food but this really isn't for me.

I am so impressed you are sticking with P90X! I am so intimidated by it...the DVDs are sitting on my floor, taunting me...
ReplyDeleteMmm I love beef stroganoff! I don't even like it with reduced fat sour cream though, ha! It's just one of those things that needs to be real for me to be happy...
