Ah yes...more leftovers pulled out of the freezer for dinner last night. Check out chicken cacciatore over whole wheat penne with a side of veggies (spinach, onions, mushrooms, tomatoes, red bell pepper and garlic):
Dessert was the fabulous Special K granola with vanilla almond milk (aka dream in a bowl):
This morning's breakfast was Fage yogurt with Fiber One cereal and strawberries:
I took the kids to school and made the 45 minute drive to Orange County to get my hair done. I met my friend Dina and our hairstylist, Ali, at the cafe across the street. I had my second breakfast: egg white omelet with spinach, onions, mushrooms and tomatoes with a side of sliced tomatoes and dry whole wheat toast:
Fabulous!! I got beautified and hopped in the car for the ride home. On the way, I had an apple and this new yummy Fiber One bar:
I ran into the grocery store to get a few things, got gas and came home. I was still hungry so I made a quick turkey and low fat swiss cheese sandwich on light wheat bread:
I needed the fuel because it was P90X time! Kenpo was the video du jour. I came home and chilled for a bit and then began fixing dinner. I took a little help from Trader Joe's and brought this out of the freezer:
Can you tell I'm trying to clean out my freezer? Anyway, I've had this before and it's good. The hubby and I like it a little more saucey so I always add some marinara. This time I also added chicken, onions, garlic and more spinach:
Wow...it was really good! It tasted like something you'd get in a restaurant and it was so easy to make!!
Today was the last day of my daughter's horrid medicine. After she took it, I had her throw the bottle in the trash. You should have seen her smile of satisfaction when she did it. We took the kids out for frozen yogurt to celebrate:
