And the leftover madness continues....I had some turkey meatballs left over from my swap party so I heated them up and served them over whole wheat spaghetti with extra veggies for dinner:

YUM!!! I love meatballs. :) I did hit up some Special K granola with almond milk for dessert:

I slept so well last night.....nobody woke me up until 7:30 this morning! Fabulous! That may sound early to some but 7:30 on the weekends is bliss. Breakfast was an egg beater omelet with a wedge of Laughing Cow cheese and veggies (spinach, zucchini, onions, tomatoes and broccoli) with a side of salsa:

I went to spin class afterwards....I hadn't been spinning in three months. Felt good to get back on the bike!!

I had this times two. And they had light ranch dressing so all was well in the world. After we came home, I finished up the laundry, did some random stuff around the house and made a snack:

Fage yogurt with some Trader Joe's Pumpkin Butter swirled in. I received the little packet of All-Bran Bran Buds to try so I decided to put it on my yogurt along with some strawberries:

I liked the bran buds! They were extra crunchy and reminded me of granola but without all the calories and fat. I might have to purchase this one!

I came home and showered and changed. We decided to take the kids to Chuck E Cheese for a little bit. Thank goodness for the salad bar.

Right now I'm enjoying a cup of coffee while I catch up on blogs. I think I may pour myself a glass of wine very soon. :)
Besides my blog :)...What is your favorite blog? Mine is probably CarrotsNCake. I love her eating style and how she balances healthy food with occasional splurges!

ReplyDeleteDo you know I have never tried Egg Beaters? Do they taste like real eggs? I've had egg white omelettes but not Egg Beaters....Looks yummy though.
