135.0....And a GIVEAWAY!!!
I'm excited to be hosting my first giveaway! More on that in a moment.....
Last night I wasn't hungry for dinner so I thought I'd skip it. Around 7 or so I decided that I was hungry so hubby and I split a Subway sandwich for dinner:
I think I like Subway much better for lunch, than for dinner. I don't know why....it felt weird eating a sandwich for dinner.
This morning I had Fage yogurt with some sugar free strawberry preserves swirled in, Fiber One cereal and some raspberries and blackberries:
I took the kids to school and then it was off to Great News for cooking class! Yee haw! Today's class was entitled "Think Outside the Wok."
I was hungry before class started so I dug into this Fiber One bar that I had in my bag:
I always keep these on hand just in case. :)
Class was fabulous as usual....today's instructor was my personal favorite: Phillis Carey. She is my food idol. :)
First up was Mediterranean Chicken and Bow Tie Pasta with Eggplant, Olives and Capers:
The flavors in this were fabulous...there was some sheep's milk feta cheese in it as well. I loved it! I think it would be a nice dish to serve to company. Fast, easy and delicious!
Next was Chicken Saute with Artichokes and Prosciutto with Orzo:
Another winner! I liked everything about this. Oh....by the way....there were olives in these two dishes and I ate them.....and kinda liked them! (For the newer peeps out there...I don't like olives but am trying to change my mind about them. It worked with mushrooms!)
Ok, I really liked this next one: Enchilada Chipotle Chicken Toss with Olives and Capers:
I ate these olives too! Fabulous chicken and sauce!!! I think it would be extra yummy with shell style pasta!
Moving along to Stir-Fried Ginger Chicken with Serrano Chilies and Fresh Shiitake Mushrooms:
Pretty simple and basic but also great at the same time. I really think the husband would like this one.
Last was Thai Pineapple Shrimp Curry with Lime Leaves and Fresh Mint:

I love curries....so I was excited about this one. This one was good but it probably was my least favorite of all of them. I think it was the pineapple that threw me off (the whole fruit with food thing).
I picked up my son from school and ran some errands and came home. I'm going out with my sister in law for dinner tonight so I'm looking forward to that. Um....can you say FOOD day!?!

ReplyDeleteI ate olives in the form of Tapenade, and I didn't hate it...wonders never cease! I'm already a follow of your great blog...and if I don't win this I might have to head down the street to Great News to buy a spiralizer since I need to get new baking supplies from there anyway.
