I had such a great time at last night's swap party!!! Great food & wine, TONS of clothes and friends...what more could you ask for!?!

So...if you are wondering how my White Girl Salsa dip came out:

I actually really liked it!! Now you know I don't like fruit in my food but this dip was good!! I served it with pita chips but it would be equally good with veggies and/or tortilla chips!

I also made the recipe for Chili's Chocolate Chip Paradise Pie that I got from Great News cooking class a few weeks ago:

I also baked up one of my favorite recipe's ever: Barefoot Contessa's Ham & Cheese Puff Pastry:

It may look like a boring square but inside is the most delicious thing you have ever tasted. Trust me on this one.

So....back to the swap party.....there was wine...

...there was "shopping".....

......there were appetizers....but best of all....there was dessert:

Oh, have I died and gone to heaven??? This chocolate chip cookie pie concoction was incredible.....with the ice cream and chocolate and caramel sauces on top...what could be better??? My friend Dina declared it "restaurant quality." Nice.

I got everything cleaned up and went straight to bed. I scored some cool shoes and tops!!! I forgot to mention that before the party, hubby and I did day two of hundredpushups.com. Still hanging in there!

I decided that my refrigerator is getting mighty full and needs to be cleaned out. I finished up some fruit salad that I had since my son's party (it was ready to be eaten for sure!). Along with that I had a slice of wheat toast and almond butter:

I took the kiddos to school and went to Zumba. The instructor will be on vacation next week so I need to go as many times as I can before then. :)

Lunch was another "clean out the fridge" experiment. My friend Lauren makes this awesome chicken, rice and mushroom dish and she brought it along last night. I was lucky enough to score the leftovers so I put some of it on top of a salad:

In the mix were mixed greens, spinach, broccoli, cucumber and tomatoes all drizzled with balsamic vinegar. I LOVED this salad!!!!! I got the idea from Tina over at CarrotsnCake to put leftovers on top of salad and I love the idea and it seems to work really well!!

Nothing crazy going on tonight fortunately...I need to step it back a little with all the decadent food!!! I'm sure dinner will involve some sort of leftovers! :)
Do you like having leftovers or do you try to avoid them? I usually freeze most of my leftovers for future easy meals. Having leftovers means less opportunity to cook new recipes. :)
