I really liked the dinner I made last night....fresh and healthy! The recipe came from the Jan/Feb 2010 issue of Woman's Health. I changed the recipe to serve two. Spicy Chicken Stir-Fry with Brown Rice:

Spicy Chicken Stir-Fry (2 servings):
1 Tbsp peanut oil
1/4 - 1/2 tsp red pepper flakes
8 oz boneless chicken breasts, cut into strips
1/2 cup asparagus pieces
1/2 cup shredded carrots
1/2 medium onion, cut into strips
3/4 cup frozen snow peas
2 Tbsp sliced almonds
2 Tbsp reduced sodium soy sauce
Brown rice for two
Combine peanut oil and red pepper flakes in a hot skillet. Add chicken strips and cook for 2-3 minutes, stirring frequently. Add all remaining ingredients to the pan and cook for another 2-3 minutes, stirring often. Serve over brown rice.
Of course the meal wasn't complete without tons of Sriacha!
Breakfast this morning was a light wheat English muffin with Barney Butter and a bowl of berries drizzled with agave:

I took the kids to school, had my oil changed in my car, ran to Target to grab some necessities and stopped at Subway for lunch:

They got a little crazy with the mustard. :)
I picked up some stuff for the end of the year parties I'm planning for both kid's classes, got my nails done and came home for a snack. Kashi Honey Sunshine cereal, Fiber One cereal, almond milk and raspberries:

The hubby and I have a dinner tonight with some friends so I need to get ready for that in a little bit. Now it's time to hang out outside with the kiddos....such a beautiful day!!!
Do you make a list when you grocery shop or just wing it? I'm a total list person. I make lists for everything! I love me my lists! :)

I make lists for everything too! I will even put on one list, to make another list. Love that feeling of checking something off. ;-)
