Ugh! I couldn't sleep at all last night!! BOO!! I tossed and turned all night long.
Breakfast was a light wheat English muffin with Barney Butter and a side of juicy watermelon:
I took the kids to camp and then went to both Cardio Muscle and Zumba classes. The lack of sleep did not help....I struggled through Zumba for sure. Oh well....at least I tried!
By the time I got home, it was lunch time and I was starving. I made a tuna salad sandwich on toasted wheat bread with tomatoes, lettuce, red onion, pickles and cucumber. I had some more tomato soup on the side:
It was delicious!!!! Then it was time to tackle this:
Boneless leg of lamb for kebabs I'm making for Bunco tomorrow night. It was a real bear but I was able to cut it up pretty well. I cut up a ton of chicken into chunks too for chicken kebabs. I'm not giving away anything else about my menu (I want it to be a surprise for my Bunco friends and they read this!). I will say that most of the recipes are Barefoot Contessa. She can do no wrong in my book.
I ran to the grocery store (again!) to pick up some forgotten items and then picked up the kids from camp. When I got home I made the marinade for the lamb and chicken and got that in the fridge. I prepped a few more things and then before I knew it, it was dinner time. I pulled out hubby's favorite Il Fornaio pasta out of the freezer that I made a few weeks ago:
I made a big Caesar salad with tomatoes and red onion as well:
Muy delicioso!!!
After I get the kids to bed, I'm going to Lisa's tonight to watch the new Bachelor Pad show. I'm not super excited about this show since I don't know many people in it but I'm excited to spend time with the girls!
Favorite salad dressing? Tie between Ranch and Balsamic Vinaigrette. Depends on my mood. :)

ReplyDeleteI love when you grab pre-prepared meals from the freezer! The convenience never ceases to amaze me! My favorite right now is raspberry vinaigrette!
