Last night's dinner was delicious!! I'm glad I made the marinara early...when I got back from my walk with Lisa and Cathi, dinner was half done. I boiled some wheat penne, grilled some chicken breasts and sauteed some veggies (spinach, zucchini, mushrooms and garlic) and dinner was done!
After I put the kids to bed, I grabbed a chocolate skinny cow ice cream sandwich for dessert. Yum!
I didn't sleep well last night for some reason. Not sure why...but don't you hate that??? I did know what I wanted for breakfast though. Scrambled eggs sounded so good! I scrambled some egg beaters and topped it with black pepper and Tabasco. On the side was a toasted English muffin with a Laughing Cow cheese wedge on it. I had some strawberries too. A lot going on with this breakfast!
I took the kids to camp and went to Zumba. I burned a ton of calories....we never stopped jumping around! Lisa....if you're reading this....you should have gone!! :)
I came home and made lunch: turkey and swiss sandwich on wheat bread with mustard, lettuce, tomato and red onion. I heated up some tomato soup too:
Then it was bill paying time. In the middle of that, my computer decided to get a virus. Guess I should have listened to my brother and installed anti-virus software? So after hours on the phone with McAfee, all is well now. I am protected. :)
We are taking the kids out to dinner with some friends and their kids. I think we are having Mexican food. Will I be able to avoid the chips????
What is your go-to healthy meal at Mexican restaurants? I like to order a tostada and not eat the shell or cheese enchiladas with tons of veggies instead of rice and beans (that might not be the healthiest option but it's better than some!).

I love Skinny Cows!!! My problem with them is that I could eat the entire package of them at once!!

I need to take a page from your book! I usually overeat. :( I try to just get 2 chicken tacos or 1 veggie taco + 1 chicken taco. My problem is the chips!

ReplyDeleteI am powerless against the chips. If I'm being "healthy" I'll get a chicken fajita burrito, but really, there's nothing healthy unless you stick with one tiny taco or something. I just go with the "moderation" plan for Mexican...as in, I go once a month if that, but we go all out.

If the tortilla soup is broth based, that is always a good option.
ReplyDeleteYour eats look so good, fresh and pretty simple, too! Love it. I usually get salads loaded with black beans and chicken at Mexican restaurants. With some guac and chips to start, of course!
