139.0 yesterday....138.8 today...Avoiding Catastrophies!
Hi folks! Sorry about my lack of post last night...I was at a Wine, Women, and Shoes event last night benefiting a local hospital...more on that in a moment.
Hubby and I took the kids to Pei Wei Wednesday night for dinner. Standard order:
Kids sized honey seared shrimp with brown rice and veggies. After dropping everyone off at home, I went to my daughter's Back to School Night. I got home around 8:30pm and hit the hay.
Yesterday morning I had a little bit of Fage yogurt left so I mixed it with some Fiber One yogurt and added Fiber One cereal and blackberries:
After I dropped the kids off at school, I was on my way to cooking class at Great News. I arrived a bit early so I stopped at Starbucks for some green tea:
I brought my laptop with me and got some work done.
My cooking class was entitled "One Dish Meals." The first recipe was Tex-Mex Chicken Tortilla Bake with Salsa Verde and Corn:
It may look like a mess on a plate but it sure was tasty!! Next up was Turkey Sausage and Cheese Ravioli Bake with Zucchini and Ricotta Cheese:
This also looks like a mess but it was delicious! It was like a lasagna but there were layers of cheese ravioli instead of lasagna noodles. Genius!
The third recipe was Mac and Cheese Romanoff with Smoky Ham and Roasted Peppers:
I loved this too! Cheese, noodles and ham...how could you not!?!
The next recipe somehow escaped my camera: Skillet Seafood Puttanesca with Tomatoes, Capers, Olives and Orzo. It w was good but not my favorite of the day. That came next....
Caramel Apple Bread Pudding with Whipped Cream. This blew me away....so freaking amazingly delicious!!
After cooking class, I picked up my son from school and then came home to get ready for the Wine, Women and Shoes event. Lisa's friend Eve bought our tickets and Lisa came to pick me up. The event was held in a beautiful home in Rancho Santa Fe and benefited Scripps Hospital and Breast Cancer. There were shoes everywhere!
....and tables with food tastings! There were a ton of local restaurants handing out tastings of their food. I think I tried almost everything there.

These cupcakes are from a local company called Cupcake Love in Solana Beach.
Here I am with Ilene the owner of the company. I enjoyed a vanilla bean cupcake with vanilla frosting. Yum!!
We did a little shopping, a little (or lot) of wine and food tastings and called it a night! What a fun night! Thanks Lisa and Eve!
Confession: I forgot to take a picture of my breakfast. I had my camera out and everything. Oh well...my brain has been a space case all week. You've seen it before anyway: whole wheat waffle with Barney Butter and some cantaloupe. I took the kids to school and came home before going to the gym. I went to the freezer in our garage to get something and realized that EVERYTHING inside was defrosted. What!?! After I freaked out for awhile, I started saving what I could by putting it in my tiny freezer inside and putting a ton of leftovers in my fridge. All the ice cream was melted. Ugh. I called and got an appointment for service today! Thank goodness.
I went to Cardio Muscle class to blow off some steam....glad I did....came out a sweaty beast! I got cleaned up and picked the kids up from school (they had a half day) and came home to grab some lunch. I had a whole bunch of leftovers to choose from in my fridge. I found something labeled "Chicken Divan with Broccoli". No date, no idea where the recipe came from.
It looks ugly but it tasted pretty good! Finally the freezer repair man came and fixed it. I guess I loaded too much stuff in front of the fan and it shut down. Oops. Live and learn. I can refill it tomorrow. One catastrophe avoided.
My son has his first T Ball class this afternoon and he's not excited. I promised to take him to Pei Wei afterwards. Hopefully I can avoid another catastrophe.
