I finished my Monday healthy eating day with success! For dinner I sautéed chicken, broccoli, carrots, onions, mushrooms and garlic and then poured some Trader Joe’s Thai Curry Sauce on it and let it simmer. Served next to brown rice, it was an awesome meal….at least in my opinion….
Hubby said, “This is ok.”
Me: “This is the fourth time I’ve made this and the three other times you liked it.”
Hubby: “Ok, I like it then.”
I had to giggle. Oh well, I really liked it. But you could put curry on a shoe and I’d eat it.
I thought dinner was good….but dessert was even better:
Low fat wheat waffle with some Peanut Butter & Co Dark Chocolate Dreams (chocolate peanut butter). Must have this snack more often….better yet…might as well have it for breakfast! It would be great with a side of strawberries. Note to self.
Breakfast was Fage yogurt with Fiber One cereal, blackberries and strawberries:
I dropped the kids off at school and went to Great News for a cooking class. Today’s class was entitled: Fall in Love with Pork. Now, hubby doesn’t eat pork. I go to get recipes and pork is usually pretty interchangeable with chicken which he will eat. But seriously….I go to eat all the delicious food!
The first recipe was Asian Pork and Shiitake Mushroom Sliders with Hoisin Ginger Sauce in Lettuce Wraps:
I loved this! This would be great on little slider buns too! The sauce was a little sweet and spicy. These would make good Asian style meatballs too!
The next plate has two recipes. The one on the left was Spanish-Style Pork Scallops Stuffed with Serrano Ham and Manchego Cheese with Romesco Sauce. The one on the right was Chili Orange Herb Marinated Pork Tenderloin with Cilantro Orange Crema on a bed of Green Chili Rice with Corn:
I loved the Pork Scallops. It was basically two pieces of pork pounded very thin stuffed with ham and cheese and then fried. Ahhhhh. I was in love. The second pork was good but it was the rice that stood out. Loved it! It would be perfect for some of the Mexican dishes I make.
The next recipe was Brown Sugar and Molasses Brined Boneless Pork Chops with Chili Spice Rub and Mustard Horseradish Steak Sauce:
This was so juicy and delicious! I especially loved the sauce. It reminded me of barbecue sauce but with more of a tang and a kick!
Last, but certainly not least, was dessert: Caramel Apple Pecan Squares:
Holy yum. Loved this! It would be so delicious with a scoop of vanilla ice cream on top! I was thinking of making an apple pie for one of my Thanksgiving desserts but this may replace that!
After class I went over to Road Runner Sports to get some new running shoes. I put a hole in the side of my old pair. I guess that shows they get some use huh? :)
I picked up the kids from school and now I’m just about reading to try out my new kicks!

How often do you replace your running shoes? Apparently I don’t do it often enough…I think I had this last pair for 10 months.
I recently tried PB&Co's white chocolate pb and it's amazing!!

ReplyDeleteI replace my running shoes about every 3-4 months. I walk the dog at least 2 miles every day and run a couple days a week too, so they wear out quick.
