140.6…Brownie Batter Chocolate Chip Cookies
While baking my Toffee Brownies for the winning bidder last night, the smell of chocolate wafted through my house. Suddenly my family started to appear in the kitchen wanting to know what the fabulous smell was. I knew I had to guard these brownies with my life. I also knew that I better get something else in the oven for them quick!
I remember seeing some extra special cookies on Heather’s blog recently: Brownie Batter Chocolate Chip Cookies!
They were easy to make and tasted just like brownies, but in cookie form. What’s not to like!?!
Brownie Batter Chocolate Chip Cookies
1 2/3 cup sugar
1 1/3 cup + 3 Tbsp all-purpose flour
3/4 cup baking cocoa
1 tsp baking powder
pinch of salt
4 Tbsp butter, softened
1/4 cup canola oil
2 eggs
1 tsp vanilla
1 cup semi-sweet chocolate chips
In a large bowl, cream together the butter, oil and sugar. Add the eggs and vanilla and mix well. Add the dry ingredients and mix until just combined. Fold in the chocolate chips. Cover the dough with plastic wrap and refrigerate for at least 30 minutes, but an hour is preferable.
Spoon the mixture into 2 Tbsp cookies and roll into a ball. Place on a sheet pan lined with parchment or a Silpat. Using the bottom of a glass, wet it and dip in sugar, then gently press down on the cookies just until they are a little flat on top. Bake at 350 degrees for 8-10 minutes. Let cool for 5 minutes and remove to a cooling rack. *Note: My cookies took about 14 minutes.
Dinner was extra delicious last night:
Garlic Cheddar Chicken with roasted red potatoes and steamed asparagus. I followed the chicken recipe exactly except that I baked it on a rack on a cookie sheet…that way both sides stay crispy. The asparagus is actually from Trader Joe’s and comes in a black package that says “microwaveable”. My mom recommended it to me and I’m so glad I tried it! Perfectly cooked asparagus!
I put some leftover asparagus and potatoes in my egg scramble this morning along with some shredded cheddar cheese. I had some more cantaloupe too.
I took the kids to school, left my car there and did my half marathon training for the day. I know I’m going to have to change up my running locations so I don’t get bored. Today was 2 miles again.

I came home, changed, grabbed an apple and peanut butter pretzels and left to get my nails done. :)

And some frozen yogurt from Golden Spoon. :)
I went to the bank, Target, the post office (Anne: your brownies are on their way!) and picked up the kids from school.
Now I’m eating grapes while blogging.

ReplyDeleteHi Melissa - I received the brownies today (actually the mailman tried to deliver them yesterday but I was at work so I popped over to the post office to pick them up). They are absolutely delicious! And I loved the packaging too. I was the highest bidder for Heather's brownie batter chocolate chip cookies and I'm looking forward to tasting those too.
