141.0…Valentine’s Day Cupcakes
It’s no secret that I love cupcakes.
When my daughter asked for cupcakes, I thought that would be the perfect treat for Valentine’s Day. I used the Pioneer Woman’s recipe for yellow cupcakes and my favorite buttercream icing recipe.
Buttercream Icing (enough for 12 cupcakes)
Printable Recipe
1/2 cup butter, softened
1/2 cup vegetable shortening
1 tsp vanilla extract
1/2 tsp almond extract
4 cups sifted confectioners’ sugar (approx. 1lb.)
1-2 Tbsp milk or water
Cream butter and shortening with a mixer. Add vanilla and almond extracts. Gradually add sugar, one cup at a time, beating on medium speed. When all sugar has been mixed in, icing will appear dry. Add milk or water as needed and beat at medium speed until ready to use.
Last night’s dinner was the last of the Baked Southwestern Chicken Breast Rolls and Poblano Rice:
I stayed up too late watching The Grammy’s last night. I actually thought it was boring this year…..maybe it was just me.
Hubby took the kiddos to school this morning. I grabbed a quick breakfast of Cinnamon Burst Cheerios with almond milk and a side of strawberries.
I hit the treadmill for today’s half marathon training: 3 miles. I then went to Cardio Muscle class for some weights action. Need to burn as many calories as possible because I plan to do some damage tonight at dinner. :)
My husband is extremely romantic and generous. Not only is he taking me to dinner tonight but he also took me to lunch AND a movie! We went to Sammy’s Woodfired Pizza for lunch. We split the Chopped Chicken Salad:
I have a love affair with this salad. The dressing is so good. The chicken is cooked so perfectly and the tomatoes and basil complement everything perfectly. We get the sun-dried tomatoes on the side because the hubby doesn’t like them. Good! More for me!
We also split the Caprese Pizza:
I ate half and my husband ate the other half…and I was still hungry. I am an animal.
We went to the movie theater and I grabbed a latte to fill the void of more food. It actually worked a little bit. :) We saw The King’s Speech….great movie!
Tonight we are going to Ruth’s Chris Steakhouse for Valentine’s Day dinner. I’m sure it will be a madhouse but I’m excited. If I were on death row and had to choose a last meal…it would be a steak dinner from Ruth’s Chris. Enough said.

ReplyDeleteWe saw the King's Speech for Valentine's Day (on Friday) and LOVED it. So well acted! I love how it's not your typical movie plot, but you get so involved in the characters and who they are. So good.
