143.8…Chocolate Chip Cookies
I totally forgot about the time change today! When my son woke me up at 8:30AM, I couldn’t believe I got to sleep in that late! It took me awhile to figure out there was a time change so it technically was 7:30 when I got up but that’s still a winner in my book!
Hubby and I had a great time at the charity event last night!
We got all dressed up and headed over to the Hyatt in La Jolla. At the cocktail reception I enjoyed some champagne:
There were a whole bunch of delicious appetizers to choose from. I had a few of these French fries:
They were garlicky goodness! I also had a bunch of sushi:
Sodium overload. I really need to guzzle water today!

Jell-O shots!!! Conversation I overheard at the bar:
Waiter (to an older woman): Excuse me, would you like a Jell-O shot?
Woman: What is in that?
Waiter: Vodka
Woman: Hmmm, that is quite youthful. No thanks.
I had to giggle a little as I threw one back in front of her. :)
After a bit, we were all seated in the dinning room for dinner. The meal started with a fabulous salad with champagne vinaigrette:
The main coarse was sea bass:
Delicious and perfectly cooked fish. Dessert was alternating shortbread cookies with fruit jam and Root Beer Floats.
Hubby got the float. I don’t like root beer. Blech. There were also little heart shaped rice krispy treats and little chocolates all over the table. I tried a bit of everything. After dessert, we headed home.
This morning all I wanted for breakfast was the same scrambled eggs I had yesterday: egg beaters, jalapenos, bean & corn salsa and shredded cheddar cheese:
Hubby made pancakes for himself and the kids. I decided those looked good too. :)
After showering, I decided to make my family’s favorite chocolate chip cookies.
They are crispy and chewy!
Chocolate Chip Cookies
2 cups plus 2 Tbsp all-purpose flour
1/2 tsp baking soda
1 tsp salt
3/4 cup butter (12 Tbsp), melted and cooled until just warm
1 cup brown sugar
1/2 cup white sugar
1 egg
1 egg yolk
2 tsp vanilla extract
1 1/4 cups chocolate chips
Preheat oven to 325 degrees. Line a baking sheet with parchment paper/silpat.
In a medium bowl, whisk together flour, baking soda an salt.
In a large bowl, whisk together butter and sugars. Beat in the egg, egg yolk and vanilla. Stir in flour mixture, followed by chocolate chips.
Drop by (scant) 1/4 cups onto the baking sheet and pat lightly so the cookie is an even thickness, not a ball shape. Cookies will spread as they bake and this ensures a more even spread.
Bake for 15-17 minutes, until just turning light brown all over. The edges should only be very slightly more brown, if at all, from the rest of the cookie. Allow cookies to cool before removing them from the baking sheet.
Makes 18-24 large cookies.

I have been drinking water nonstop today but still feel dehydrated. Too much salty food lately!
The rest of the afternoon I plan to chill, read blogs, unload the dishwasher (ugh) and make dinner. Enjoy the rest of your weekend!
Do you like Panda Express? I’m not a big fan. I find it really bland. I prefer Pei Wei!
What is your least favorite household chore? I really don’t like unloading the dishwasher.

I'm with you, for fast food chinese-like food, the only thing I'll consider is Pei Wei. Yum!

ReplyDeleteThat picture of your hubby and you, gorgeous!!! Hotties! I definitely giggled at the jello shot situation...bottoms up! I've never been to either Pei Wei or Panda Express so I cannot participate, BUT I will say that I'm not a big fan of LOADING the dishwasher. While it definitely saves time so you don't have to do the dishes, I don't like touching dirty dishes. To me, it's gag worthy. I'm special. Hahaha...

My most hated chore is washing the dishes, which is why it's my husband's chore. hehehe BTW, those cookies are caaaaaalling to me. I'm going to close my browser now to shut them up. ;)
