143.8…The Holidays Are Over
It’s March 1st and the holidays are over. You’re thinking: “What are you talking about!?! The holidays ended a long time ago.” Yes…this is true but I’ve been eating, drinking and celebrating like they are in full swing! Spring is coming, the weather is changing and so must my eating habits. Well, at least after my upcoming trip to Napa this weekend. :)
After the meeting at the school last night, Hubby and I grabbed a quick dinner at Sammy’s Woodfired Pizza. We shared hummus:
And our favorite Chopped Chicken Salad:
The tomatoes were all mine. :)
I discovered a container of Fage yogurt in my fridge that is going to expire soon so I made use of it this morning for breakfast. How could I forget about you old friend?
Fage yogurt with a little strawberry jelly mixed in, All Bran Bran Buds cereal (great crunch!) and some strawberries.
After dropping the kids at school, I went to Starbucks for a green tea and to read some blogs before my cooking class at Great News started. Today’s class was called: Easy Everyday Cooking.
The first recipe was Honey-Chipotle Broiled Salmon with Corn and Cilantro Mashed Potatoes:
The glaze on the salmon was excellent and the potatoes with the corn were fabulous!!
Next up was my favorite: Feta Turkey Burgers with Grilled Red Onions and Garlic Toasted Buns:
So moist and delicious! I loved the feta in the burgers. I hope to make these next week!
The next plate contains two recipes: Chicken Breast with Roasted Garlic Lemon Sauce and Apricot and Panko Crusted Pork Tenderloin:
The garlic sauce on the chicken was really simple and tasted great….how can you go wrong with roasted garlic? I loved the apricot sauce on the pork…and this is coming from someone who doesn’t like “fruit with her food.”
Dessert was Easy Root Beer Float Cake with Root Beer Icing:
It was served with vanilla ice cream. I loved this and I don’t like Root Beer. The cake was moist and the icing was dreamy!!!
I picked up the kids from school and came straight home. It’s actually almost time to get dinner started. I would like to go to bed early tonight if possible…hopefully that can be arranged. :)
Do you like Root Beer? I have never liked it.
Do you drink soda? I used to drink a ton of soda in college until one time I got a really bad UTI. I was told to stop drinking soda and drink more water. Haven’t touched the stuff since. :)

ReplyDeleteI drink soda usually only if i'm super sick and its the only liquid other than water or tea to drink OR when i'm having too much fun out with friends... and its spiked =)

I'm so intrigued by your cooking classes....are they a go for fun kind of thing, or like a culinary school kind of thing?

Megan: the cooking classes are a "just for fun" thing. :) Great News offers a ton of cooking classes and I try to pick 3 or 4 a month to go to.

ReplyDeleteYou are to hard on yourself. You are training for a half marathon and exercise everyday - sometimes 2 workouts back to back. Life is short, enjoy your eats and drinks, aka wine :-), without feeling guilty. You are still eating and exercising better than 85% of the population.
ReplyDeleteOh, and besides wine, I do drink a couple diet sodas a day. I've actually cut down, but when I try to eliminate them, I only crave them more.

ReplyDeleteI also enjoy diet soda. I try to limit it to only occasionally and drink drink drink my water. It doesn't always work. But I've never liked regular soda. My mother didn't allow it our house!
Hi Melissa! We actually watch the instructor cook the food and they serve us little bits of each thing. There are some classes that are hands on but most of the ones I attend are ones you watch.

ReplyDeleteI also love diet soda...I know it's not all that great for me, but it's one vice I'm unwilling to give up!
I don't really drink soda but a good bottled root bear is a fabulous splurge...I haven't had one since August so that shows you how often it happens! So can you share the cake and mashed potato recipes? I used to mix my corn ad mashed potatoes together when I was little=)

ReplyDeleteHooray for sweet with meat! I love it, my husband can't stand it, so I usually have my sweet dipping sauce on the side.
I used to drink a ton of pop. My go to was Diet Dr. Pepper. When I interviewed at the law firm I work at now, the last question they asked me was "what's your favorite pop?" I thought it was a trick question, but I told them it was diet dr. pepper.
On my first day of work, they showed me the office pop fridge, and there on the bottom right hand shelf were a dozen cans of diet dr. pepper - I've been here almost six years and I am never without pop - although I limit myself to 2 a week. :D

I am not a huge soda drinker, but will occasionally have a soda on a special occasion...which is definitely less and less the older I get. I would rather have a cocktail! :)
