144.2…Chicken Cacciatore
I was really hungry all day yesterday. It seemed like nothing satisfied me. Don’t you hate that!?!
On the way to pick up my son from school, I brought a snack along with me because I was still hungry after my lunch and OTHER snack.
Last night’s dinner rocked. Simple as that. My husband is a big fan of Chicken Cacciatore so I have made many recipes but this one was my favorite. Not sure if it was the new marinara I used or what.
I bought this Giada De Laurentis Tomato Basil Pasta Sauce on a whim when I was at Target the other day. The recipe for chicken cacciatore called for tomato basil pasta sauce so I decided to use it. From what I could tell from the recipe, it rocked! I have a bit left in the jar so I’ll have to use it by itself to see what I think.
Chicken Cacciatore serves 4
Adapted from Cooking Light
- 1 pound skinless, boneless chicken breast, cut into bite-sized pieces
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon crushed red pepper
- Cooking spray
- 2 cups sliced cremini mushrooms
- 3/4 cup chopped bell pepper
- 3 cloves garlic, minced
- 1 1/2 cups tomato-basil pasta sauce
- 1/4 cup dry red wine
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup (about 2 ounces) shaved Parmigiano-Reggiano cheese
- 2 tablespoons thinly sliced fresh basil
Heat a large nonstick skillet over medium-high heat. Sprinkle chicken evenly with oregano, dried basil, and red pepper. Coat pan with cooking spray. Add chicken to pan; sauté 2 minutes or until lightly browned, stirring frequently. Add mushrooms, bell pepper and garlic to pan; sauté 5 minutes. Stir in pasta sauce and wine; bring to a simmer. Cover, reduce heat, and simmer 10 minutes. Stir in salt and black pepper. Sprinkle with cheese and fresh basil.

I took the kids to school and went to Cardio Muscle class. I came home to change and whip up a batch of my Rice Krispy Treats. Several months ago my daughter’s old class started a book club and I’ve been once since. It’s my turn to host tonight so I made some treats for the kids. The kids come fed and in their pjs. They watch a movie and eat snacks while the moms have some snacks, wine and talk about the book. I choose The Help. I love that book and thought it would be a good one since the movie is in the theaters.
Lunch was a MONTSTER of a salad.
My husband walked in while I was making it and said “WOW.” You cannot tell how big it is from the picture but it was the size of my head. I think I got a little carried away with it. I ate the whole thing and now my stomach is also sticking out like the size of my head. Oh well. At least all I got all my veggies in!
Ok gotta run….I’m getting my hair done at a new place today and my appointment is soon. Here’s to hoping they do a good job! Eeek!!
