139.2…Banana Bread
When I was heating up my leftover Beef Stroganoff last night, I was not excited. My Beef Stroganoff is one of my favorite meals ever but I discovered the other night that it does not freeze well. Well, last night it tasted great! I think I stirred it more this time? I don’t know. It doesn’t matter, it tasted delicious!
Breakfast this morning was extra delicious. I made a scramble using egg beaters, chopped ham, broccoli, green onions and shredded cheddar cheese.
I had some bananas that were turning black so I decided to do something I haven’t done in awhile….bake! I made one of my favorite banana bread recipes!
Banana Bread
Slightly adapted from For The Love Of Cooking
Preheat the oven to 350 degrees. Cream the butter, sugar, vanilla, and eggs together in a bowl. Combine the dry ingredients and mix well then slowly add the flour mixture to the sugar mixture. Add the bananas, sour cream, stir well to combine. Pour into a 9x5x3 loaf pan that has been coated with cooking spray. Bake for 1 hour or until a tester inserted into the center comes out clean. Cool on a rack.

I’m excited to watch the Oscars tonight...even though I have not seen a single one of the movies up for best picture. :)
