141.2 yesterday…Cupcake Overload
Since I’ve been on a roll with the Cooking Light magazine recipes, I thought I’d try one for Black Bean & Cheese Enchiladas with Ranchero Sauce.
I made it Thursday night. It was a bit time consuming so I really hoped it would be good. It wasn’t.
Blech. I ate mine with avocado and had to add a ton of hot sauce to make it edible. Fail. Oh well, you can’t win them all, I guess.
Friday morning’s breakfast more than made up for it.
Egg beaters, avocado, hot sauce on a toasted English muffin with a side of strawberries. Fabulous.
I took the kids to school and went to Cardio Muscle class. The instructor really kicked our butts and I loved every minute of it.
I came home to shower and eat lunch.
Turkey sandwich on wheat bread, jalapeno Pop Chips and an apple. Then I packed the car and headed over to the kids’ school for a couple of events. After school, I dropped them off at a friend’s house and hit the road for Los Angeles to celebrate my sister in law’s birthday.
On the way, I snacked on a Kellogg’s Fiber Plus bar and some pretzels. When I finally arrived two and a half hours later, there was wine waiting for me. :)
My sister in law Stephanie is Italian and makes the best Italian food. She cooked a fabulous dinner for everyone.

Seriously the best sauce and meatballs ever. I went back for seconds.

Someone was kind enough to bring cupcakes from Susie Cakes for dessert.
Of course I had to try a bit of each one. There were four different kinds: vanilla with chocolate frosting (my least favorite), chocolate with white icing (the best), red velvet and coconut.

I ate half of each kind and went to bed with a stomach ache. :( I haven’t been eating desserts lately or really heavy food for that matter so I guess I wasn’t used to it. Oh well. It was delicious and I’d do it all again. :)
Right now I’m enjoying a cup of coffee while waiting for my sister in law and her friend to pick up bagels for everyone.
Today we are going shopping and tonight we are going out for sushi. It’s going to be a rough day. ;)

Favorite cupcake store? I had never heard of this Susie Cakes place but the cupcakes were pretty spectacular.
You totally like to eat the same foods as me! Love all the bread! :) The black been enchiladas look wonderful!! I just got a subscription to cooking light, can't wait to start getting them in the mail. have a good rest of the weekend!!

It is so silly when we are excited to do something great but fail to nothing. I had also this time. I was so excited to make dessert for the big family but end up to something I recommend to not eat that food. I couldn't even called it food lol!
