136.2…Oatmeal Raisin Cookies
Yesterday I was in the mood to bake cookies. When I asked my husband what kind of cookies he wanted, he reply was Oatmeal Raisin Cookies.
When I am craving a cookie, I normally reach for a chocolate chip one. But I don’t give the oatmeal raisin cookie enough credit.
Oatmeal raisin cookies always feel comforting to eat…I think it’s the cinnamon, raisins and chewy goodness that does it.
Oatmeal Raisin Cookies
Slightly adapted from For The Love of Cooking
- 1/2 cup of unsalted butter, softened
- 2/3 cup light brown sugar, packed
- 1 egg
- 1 tsp vanilla extract
- 3/4 cup of all purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 1/2 tsp ground cinnamon
- 1 1/2 cups of rolled oats
- 3/4 cup raisins
Preheat the oven to 350 degrees. Line a baking sheet with a silpat mat or parchment.
In a large bowl, cream together the butter, brown sugar, egg, and vanilla until creamy and smooth. Whisk the flour baking soda, salt, and cinnamon together in a separate bowl. Slowly add the flour mixture to the butter and sugar mixture. Stir in the oats and raisins and mix until combined.
Place dough by the spoonful onto the silpat mat. Bake in the oven for 10-12 minutes or when the cookies are golden at the edges. Let the cookies sit for a minute before moving them to a rack to cool.

I went back for a second slice of pizza. I can’t stop at just one.
This morning I ate my current favorite breakfast: Pineapple Chobani with homemade granola, strawberries and blackberries.
I only have two containers left of the pineapple Chobani. Eek!
I went to Cardio Muscle class and then ran a bunch of errands. For lunch I made another tuna salad on top of greens. My current favorite lunch.
The salad was humungous. I almost couldn’t eat it it but I powered through it.
I went to a doctor appointment and came home. I was pretty hungry so I snacked on some grapes so I wouldn’t eat dinner at 4:30. :)
Hubby is working late tonight so I will be heating up some leftovers for dinner momentarily. It’s an exciting night over here!

Could you send me a dozen of those cookies??? PLEASEEEE. hehe. Oatmeal cookies are a big weakness for me.
ReplyDeleteYum, you're so right. I go for chocolate chip too and hardly ever think of oatmeal raisin but they really are a homey comfort. mmm. Favorite: brown butter chocolate chip.
