136.4…S’mores Cookies
I’m about to tell you about something so sinfully delicious….you’ll either hate me or thank me later.
Probably the latter.
At the annual cookie exchange last year, I was introduced to these delicious things. My friend Michelle brought them and forever changed my life.
We have a fire pit in our backyard and our favorite thing to do is roast marshmallows and make S’mores. Well, now we don’t even have to turn on the fire pit.
S’mores Cookies (Makes about 2 dozen)
Original Recipe: Cookie Madness
12 Tbsp unsalted butter, room temperature
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon baking soda
1 1/4 cups all-purpose flour
1 cup graham cracker crumbs
1 1/2 cups semi-sweet chocolate chips
1 cup miniature marshmallows (approximately)
2 Hershey Bars, broken into pieces (or other favorite milk chocolate)
Preheat oven to 350 degrees. Line 2 cookie sheets with parchment paper.
Cream butter and both sugars with an electric mixer; beat in egg and vanilla. Beat in salt and baking soda making sure they are well distributed and free of lumps; stir in the flour, followed by graham cracker crumbs. Stir in chocolate chips.
Drop dough by heaping tablespoonfuls onto cookie sheets, spacing about 3 inches apart. Bake for 9 minutes. Remove and quickly press marshmallows and chocolate into cookies. Return to oven and cook until done (about 3 or 4 more minutes)
Last night I had the rest of my sister in law’s “gravy” and pasta for dinner. There wasn’t much pasta left so I added a bit of leftover rotini to it.

To get my greens in, I had a big salad to go with it.
So…my friend Lisa is out of town. Yesterday I helped watch and walk her dog. To thank me, she bought me a whole bunch of Chobani pineapple yogurt. Lisa…I’ll watch your dog any day.
I enjoyed my yogurt this morning with more homemade granola and berries.
I got dressed and all packed up for our family trip to Palm Springs this weekend. For lunch, I enjoyed a roast beef sandwich which I added my favorite Jalapeno Yogurt dip to as well as dipped some celery in it. I also had some grapes on the side.
We are about to hit the road soon! Have a great weekend!
