136.6…California Casual Cooking
Last night’s “Hot Wing” night started out like any other “Hot Wing” night:
I fried up the hot wings and sauced them perfectly using my Restaurant-Style Buffalo Chicken Wings recipe. Alicia brought over a great salad to go with it.
Dinner was served! I don’t think I could ever get sick of hot wings!
This morning’s breakfast was Dulce de Leche Cheerios with almond milk and a side of strawberries.
I took the kids to school and went to Starbucks for a skinny vanilla latte.
Then it was off to Great News for a cooking class. Today’s class was taught by my favorite instructor, Phillis Carey, and was entitled “California Casual Cooking.”
The first recipe was Chili Marinated Grilled Chicken Breasts with Avocado Salsa with Tomatoes and Pickled Jalapeno:
This was my favorite dish of the class. Loved the grilled chicken and the avocado salsa was outstanding. I think you will see this recipe made at my house soon!
The second recipe was Artichoke, Leek and Potato Soup with Mascarpone Cheese:
So comforting and delicious! Loved the flavor of the artichokes in this soup.
The next recipe was Corn Fritters with Warm Tomato Salsa and Arugula Dressed with Whole Grain Mustard Vinaigrette:
The fritters were excellent and I enjoyed the addition of the tomatoes and arugula.
Next up was Broiled Salmon with Sweet Fennel-Paprika Spice Rub and Lemon Chive Aioli:
This was also very good….loved the aioli! The rub was nice because it was a bit sweet from the addition of brown sugar.
Dessert was Peach and Blackberry Shortcakes with Blackberry Cream:
It might look a bit crazy in the picture but this thing was good! There were puréed blackberries folded into the whipped cream and it made a beautiful color! Perfect summer dessert!
After class I ran some errands, picked up the kids from school and came home. Tonight is Bunco is at Alicia’s house and she is having it catered from El Napolito….an awesome Mexican restaurant. I can’t wait! Chips and guac…here I come!

ReplyDeleteHi Donna! I go to a place called Urban Sun and get a Mystic Spray Tan. I also like Mystic's products that you can buy to do at home but my favorite is the actual spray tan done at the place. Thanks! :)
