Baja Fresh Salsa – Holiday Recipe Club
For this month’s installment of the Holiday Recipe Club, we are celebrating Cinco de Mayo. Our ingredient choices were Dulce de Leche, Chorizo or Tomatoes. When I think of Cinco de Mayo, I immediately think of chips and salsa. I knew tomatoes would be my ingredient. I originally was going to post a Pico de Gallo recipe but remembered a salsa I made awhile back that I really enjoyed.
This one is a copycat recipe of one of Baja Fresh’s salsas. Whenever I eat there, I love putting this salsa on everything! The flavor is so different from that of other salsas. It comes from charring the ingredients!
Baja Fresh Salsa
7 Roma tomatoes
1 jalapeno pepper
1/4 white onion
1 clove garlic
1 tsp salt (or to taste)
1/2 cup fresh cilantro
Juice of one lime
Toss tomatoes, jalapeno, onion and garlic with some olive oil. Place on an indoor grill pan or outdoor barbecue grill until charred, turning every 10 minutes or so.
Place all ingredients into the food processor or blender and blend until you’ve reached your desired consistency. Chill until ready to serve.
