137.2 yesterday…Garlic Chicken
My friend Julie (who was the brains behind “Big Hair Bunco”, recently gave me a recipe for Garlic Chicken that she thought I’d enjoy. Boy, did I!
It was easy to make and my husband and I ate every bite!
Garlic Chicken (Serves 4)

Ingredients:
4 boneless skinless chicken breasts
16-20 garlic cloves, peeled and sliced
4 Tbsp unsalted butter
Salt & Pepper to taste
Directions:
Preheat oven to 350 degrees.
Cut pockets in each chicken breast and stuff with sliced garlic. Lightly spray a baking dish with cooking spray and place the stuffed chicken in the dish. Put a tablespoon of butter on each piece of chicken and salt and pepper to taste.
Bake for 35-45 minutes. Broil for the last few minutes at the end to brown the chicken.
This tasted great with rice and roasted asparagus. Thank you Julie!
Yesterday morning’s breakfast was a toasted English muffin with peanut butter and a side of strawberries.
I took the kids to school and then drove to Los Angeles to visit my mom and dad. I ran some errands with my mom and we picked up Corner Bakery for lunch. I had half a BBLT (applewood smoked bacon, tomatoes and green leaf lettuce with homemade cracked pepper balsamic mayo) and a cup of roasted tomato soup.
The sandwich was SO good! The soup….not so much. I felt like I was eating Prego spaghetti sauce.
For dinner, we got really ghetto.
Taco Bell! I have to say it’s my favorite fast food ever! I had a taco supreme and bean burrito with extra onions. I probably eat Taco Bell once or twice a year and it’s a special treat when I do.
This morning’s breakfast was simple: toast with butter.
I hit the road for San Diego. I ran a few errands and stopped for lunch at Luna Grill. I had my standard Greek salad with a chicken kabob.
I picked up the kids from school and came home. It was a quiet afternoon at home, which I love. I made a recipe for dinner that I’m excited to share with you. If you like Mexican food and pizza, this will be for you!

ReplyDeleteI am loving chik fil a lemonade lately..and they have these new chocolate chunk cookies that are to die for! I love corner bakery, there's 1 near my office in Philly. Funny bc I had the tomato soup last week and didn't like it either. Love the harvest salad and tomato/mozzarella sandwich.

I am a sucker for McDonald's fries. So salty, so good. And I love grilled cheese and tomato soup but find it better tasting at home.
