138.4…Polo Anyone?
I just love long, relaxing weekends. Can they please happen more often?
My long weekend started yesterday with a relaxing breakfast.
Pineapple Chobani yogurt, Cascadian Farms Granola, strawberries and raspberries.
I went to spin class and had a great workout. After a shower, it was time for lunch. My friend Lisa recently gave me this box of frozen Mahi that she didn’t like. (She didn’t know she didn’t like mahi mahi). :)
Inland Market Sea Salt & Roasted Garlic Mahi.
I served it with asparagus and brown rice and ate every bit. I thought the fish turned out perfectly and enjoyed the sauce that came with it. I followed the instructions on cooking it from frozen and it couldn’t have been easier.
The rest of the day was spent cleaning out my closet. It’s been something I’ve been meaning to do for awhile and it felt really good to get a start on it.
My husband, who has been away on business, came back last night with Pei Wei for dinner. We shared the Pei Wei Spicy Chicken, rice and Dan Dan Noodles.
Carbs of champions!
This morning was so leisurely and wonderful. My husband and I sat on the couch drinking coffee while the kids played. I cannot remember the last time we relaxed on our couch on a weekend morning.
Eventually it was time to make breakfast. I opted for an egg beater sandwich with strawberries on the side.
My friend Alicia and her husband Joe (aka our hot wing/Phil’s BBQ partners) invited us and some other friends to a day of Polo at the San Diego Polo field. Our lovely afternoon started with some champagne.
It was made even more fabulous with a beautiful cheese platter.

I had never been to a polo match before. I didn’t understand the game at all (I didn’t really try to though) and found it a bit boring until someone’s dog ran onto the field and started chasing the horses. Now, that was entertainment!
For lunch I chose the Roast Beef Panini and Quinoa Tabouleh salad.
Yum!
Near to the end of the afternoon, they had us all come out and “stomp the divets” Pretty Woman style.

The game may not have been exciting but it was fun to hang out with friends and enjoy this relaxing weekend!
