139.4…Getting It Wrong & Back To Class
Sunday night the kids wanted Pei Wei for dinner. I couldn’t bring myself to eat it again so we made a compromise. Brett’s BBQ was a couple doors down so my husband and I got that while the kids got Pei Wei. We ate it at one of the center’s outdoor tables. It was a beautiful summer night, perfect for outdoor dining!
I ordered the half rack of baby back ribs and cole slaw. I enjoyed every bite!
Yesterday morning I had a piece of toast with my favorite peanut butter: Teddie Super Chunky Peanut Butter.
Then it was time for Cardio Muscle class. The instructor had taken the summer off and I was SO excited for her return. Normally if I miss a week of her class, I’m super sore afterwards. Imagine not doing her class for the entire summer! Well, as expected, it kicked my butt. I am having a hard time sitting. :)
After class, I was shaking. I slowly did some work around the house and then got ready to take the kids to our club’s pool for their Labor Day party. I ordered our lunches and relaxed with Lisa. The club only had one cook that day and so it took 90 minutes to get our food. After my crazy workout and waiting that long to eat, I thought I was going to evaporate. They ended up making my salad wrong but I was too famished to send it back. I was also too famished to snap a photo. Oops!
Eventually we came home and my sister in law and her kids came over to swim and have dinner. We decided to pick up Wahoo’s for dinner. Instead of my normal shrimp burrito, I decided to order two fish tacos instead. Too bad they only gave me one taco. :( My husband was kind enough to share a carne asada taco with me. :)
The fish taco was good but the carne asada one was just ok. I guess I didn’t have good luck in food yesterday!
I did experience some luck with the desserts my sister in law brought.
Red velvet cake and Boston cream pie. I had a small slice of each. What a great way to end a great long weekend!
This morning’s breakfast was Pineapple Chobani, Cascadian Farms Granola, strawberries and raspberries.
I took the kids to school and then went to Great News for a cooking class. I hadn’t been to a cooking class since June!! I was more than excited!
Before class, I grabbed a skinny vanilla latte at Starbucks.
Today’s class was entitled “Fast Fish Entrees” and was taught by my favorite instructor, Phillis Carey. Phillis isn’t a big fan of fish so she comes up with recipes that disguise the flavor of the fish with lot of yummy sauces and toppings. I like the flavor of fish but I also like what Phillis does to it.
The first recipe was Baked Ginger Macadamia Nut Crusted Salmon.
I loved this! The sauce was simple and would be easier to make on a weeknight.
The second recipe was Mahi Mahi with Scallions and Asian Black Bean Chili Sauce.
This was also good although I liked the salmon better. The black bean gave it a unique flavor and I enjoyed the addition of the scallions.
The third recipe was Crispy Parmesan Halibut with Capers and Lemon Butter.
This one was by far my favorite. I loved the crispy fish and the piccata type sauce!
The next recipe was Red Snapper with a Sun-Dried Tomato, Mustard and Walnut Crust.
The mixture on top of the fish was really good. It was another simple dish you could throw together pretty quickly.
The last recipe was Shrimp and Scallops in Coconut Lime Sauce with Jasmine Rice.
I don’t know exactly what it was but I wasn’t a super fan of this. I found it a bit too sweet for my liking. Oh well…can’t win them all! Everyone around me seemed to like it though!
After class I ran some errands and then picked the kids up from school. We just finished homework (I don’t know who likes it least: me or my son) and now it’s time to make dinner. Have a great evening!

No Labor Day here in Taiwan, but I was glad to not have any US a based mtgs on Tuesday! I think the best thing I ate over the weekend was chinese at a cute local restaurant, Lili's - stir fry green beans, sweet and sour pork, dan dan noodles. yum! we also went to a fun wine tasting on Friday night and had some yummy appetizers. Oh, maybe the best was the Haagen Daazs the kids and I walked over to Sunday night :) It is a 2 story bldg here, truly an event - they have a huge menu with all kinds of fancy concotions, though I just got 2 yummy scoops.
