135.2…Buttermilk Cornbread
As promised, I bring you my favorite cornbread recipe. It’s perfect to go with my Favorite Chili!
Buttermilk Cornbread
Ingredients:

1/2 cup butter

2/3 cup white sugar

2 eggs
-
1 cup buttermilk
-
1/2 teaspoon baking soda
-
1 cup cornmeal
-
1 cup all-purpose flour
-
1/2 teaspoon salt
Directions:
- Preheat oven to 375 degrees. Grease an 8 inch square pan.
- Melt butter in large skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the prepared pan.
- Bake in the preheated oven for 30 minutes, or until a toothpick inserted in the center comes out clean.
The night before I left my parent’s house, I FINALLY tried a slice of the Chocolate Cinnamon cake I made for Thanksgiving.
It was pretty tasty! I’ll have to make it again so I can get a better photo of it and share the recipe!
Wednesday morning’s breakfast was a fried egg & cheddar cheese sandwich on a bagel thin.
I drove back to San Diego and stopped at Jersey Mike’s for lunch. I had a mini Italian sub with salt & vinegar chips.
I kept thinking the rest of the day what a perfect lunch that was.
I ran some errands, picked the kids up at a play date and then came home. My husband was kind enough to pick up Los Primos for dinner. I shared the carne asada mini tacos with him.
Yesterday morning’s breakfast was scrambled egg beaters with salsa and shredded cheddar cheese. I also had a slice of Cheddar-Scallion English Muffin Bread toasted with butter.
I took the kids to school, went to my nail appointment and then Luna Grill for lunch.
I had my favorite Greek salad with a chicken kabob.
Last night my husband and I went to a new member event at our new club. I enjoyed some champagne and delicious appetizers.
Since I was meeting all new people, I really didn’t want to whip out the camera and take pictures of the food and then have to explain my blog. Sometimes that’s awkward. :)
This morning I prepped for my Stella & Dot jewelry party before taking the kids to school. When I got back, I finished preparing the food right before everyone arrived.

I think everyone got a good bit of their holiday shopping done today!
After I cleaned up, I ran to Target and then came home to get the laundry started and make a quick turkey sandwich before picking up the kids at school.
I just finished making a couple of dishes for a dinner party at a friend’s house tonight. Have a great evening!
