135.8…My Favorite Chili
Sunday night was supposed to be Burger Night at our club but our kids weren’t feeling well so my hubby picked up dinner instead. We got Brett’s BBQ. I wasn’t complaining.
Baby back ribs, sweet potato fries and cole slaw.
Monday morning’s breakfast was Trader Joe’s vanilla Greek yogurt and Coconut-Sour Cherry Granola. No fruit. I’m all out. Need to go to grocery store.
I went to Cardio Muscle class, ran some errands and stopped at Wahoo’s for lunch for some fish tacos.
The rest of the afternoon was spent working on my holiday card. I’m really excited about it. It turned out great!
For dinner I made my favorite chili! It’s the perfect combination between meat and beans.
My Favorite Chili (Serves 6-8)
Ingredients:

2 pounds ground beef

1/2 onion, chopped

1 teaspoon ground black pepper

1/2 teaspoon garlic salt

2 1/2 cups tomato sauce

1 (8 ounce) jar salsa

1 packet chili seasoning mix

1 (15 ounce) can light red kidney beans
-
1 (15 ounce) can dark red kidney beans
Directions:
- In a large saucepan over medium heat, combine the ground beef and the onion and sauté for 10 minutes, or until meat is browned and onion is tender. Drain grease, if desired.
- Add the ground black pepper, garlic salt, tomato sauce, salsa, chili seasoning mix and kidney beans. Mix well, reduce heat to low and simmer for at least an hour.
I love to serve this topped with shredded cheddar cheese, onions and sour cream as well as my favorite cornbread.

This morning’s breakfast was scrambled egg beaters with shredded cheddar cheese and salsa. I ate it with a toasted piece of Cheddar-Scallion English Muffin Bread that I found in my freezer. :)
I took the kids to school and then drove to Los Angeles to visit my parents. My mom and I stopped by Corner Bakery for lunch. I had a BLT and a Caesar salad.
Then we went to Target and came home. I’ve spent the rest of the day hanging out with my parents and cleaning out my email. I don’t know how it gets so out of control so fast.
My mom picked up Luciano’s for dinner. We had veggie pizza and Caesar salad.
There’s a bunch of desserts here…I’m contemplating some cake. :)

Hope your foot is feeling better! My favorite chili is my buffalo chicken chili - people have used the recipe in chili cookoffs and have won with it! :D
