135.4…Potato & Boursin Frittata
Having overnight guests and want to serve them a fabulous breakfast? Or do you just want to treat yourself to something yummy in the morning? I have the recipe for you: Potato & Boursin Frittata.
Potato and Boursin Frittata (serves 4 as an entree)
Ingredients:
8 large eggs
1/4 tsp salt
1/2 tsp black pepper
1/4 cup olive oil
2 cups frozen shredded hash brown potatoes (from a 16 oz bag)
1 bunch scallions, chopped (2 cups)
1 (5 oz) package Boursin garlic-herb cheese, chilled
Directions:
1. Put oven rack in middle position and preheat oven to 375 degrees. Whisk together eggs, salt, and pepper until just combined.
2. Heat oil in an ovenproof 9 to 10 inch heavy nonstick skillet over high heat until very hot but not smoking. Add potatoes and scallions to oil and some salt and pepper, stirring once, then cover and cook until beginning to brown, about 4 minutes. Stir potato mixture once, then cover and cook 3 minutes more. (Make sure the potatoes cover the bottom of the pan.)
3. Pour beaten eggs evenly over potato mixture and crumble cheese over eggs. Transfer skillet to oven and bake frittata, uncovered, until set and just cooked through, about 15 minutes. At this point, you can broil the top to get it a bit more brown. Cut into wedges and serve.
I served this at my Stella & Dot jewelry party lately and it was a big hit. You won’t be disappointed.
Last night my husband and I drove to Orange County for one of his work holiday parties. The party was at Roy’s in Anaheim. When we arrived, we mingled a bit and then were seated for dinner.
An appetizer plate arrived for the table:
Seared Ahi, spare ribs, shrimp and lobster pot stickers.
There was also two different sushi rolls that arrived:
I’m not totally sure what they were but I do know they were good!
Our salad arrived next….
….followed by the entree I chose which was the Seared Ahi:
That sauce was a hot mustard sauce. And boy, was it hot! I enjoyed the ahi and the veggies….and I did eat all the sauce. What can I say?? I like it hot. :)
This morning’s breakfast was the last piece of the Potato & Boursin Frittata and a toasted slice of Cheddar-Scallion English Muffin Bread with butter.
Today has been spent cleaning off my desk (the perpetual mess) and cleaning out my inbox. Lunch was the leftover spaghetti with meat sauce from Olive Garden.
Fast. Easy. Done.
Tonight is the holiday party at our club. I’m really excited to get dressed up and spend an evening with my friends.
