Knocked Out
It’s not just what happened at the boxing fight….it’s also all the eating I did! I’m down for the count. I haven’t eaten that much in a long time! I’d like to say that I’m going to go on a diet this week but there’s too many holiday functions coming up! Oh well…isn’t that what January is for, anyway??
I got Saturday’s flight to Las Vegas started right.
We arrived at our hotel, The Cosmopolitan, and checked in. While checking in, we were given a glass of champagne. Fabulous!

Our friends, Alicia and Joe arrived and we went straight to lunch at Holstein’s. I LOVE their burgers!
Wine:
One of the most amazing burgers ever. Meet “El Machete”:
Beef patty, fire roasted Anaheim chili, borracho onions, pepperjack cheese, lettuce, tomato, onion & spicy “Machete” aioli.
Aka Heaven. Seriously.
We gambled a bit and then went back to our room to get ready for the Pacquaio vs. Marquez boxing fight at the MGM Grand.

At the end of the 6th round, Marquez knocked Pacquaio out. I mean, really knocked him out. He was out cold for over a minute. A bit scary, I must say. He eventually got up, thank goodness. Besides the scary part, it was the best fight I’ve ever seen live.
Afterwards we went back to our hotel and gambled a bit. It was 1 in the morning before we retired to our rooms. No dinner…those Holstein burgers really knocked us out!
By Sunday morning, I was really hungry. By the time we all got our acts together and made our way to the Palazzo hotel for breakfast, it was almost 11:00.
Champagne is a good way to start the day, don’t you think?
It is also good to drink your champagne with beignets.
Since it was lunch time by then, my husband and I opted for lunch while Joe & Alicia had breakfast. We are quite the team.
We split spinach & artichoke dip:
I had a cobb salad.
Full.
The guys went to watch the football game while Alicia and I went shopping. Somewhere along the way we stopped for refreshments.
And then snacks at Javier’s at the Aria hotel.

Eh. Wasn’t the best guac I’ve ever had. Their salsa was good though!
After shopping, it was time to get ready for night #2.

Then I enjoyed my favorite pasta dish ever. I order this every time I go there.
Pici Toscani: hand rolled thick spaghetti, bolognese sauce, aged pecorino cheese. Always fabulous.
Dessert:
Grand Marnier soufflé. Oh yeah.
After dinner we gambled a bit but we were so full we called it a night. Food coma to the extreme.
To add to the extreme knock out of eating…..today’s breakfast/lunch:
Holstein’s again. El Machete. I’m down on the mat. Lights out!

Whata great trip! I am excited now! I'm taking my step-daughter in February for her 21st birthday, just us girls! I have to try the burger place out!! Don't you love the Palazzo's restaurant? I normally eat at Lavo's when I go! I love there gigantic meatball!!! Great post! Looks like lots of fun!!
