139.2…South-Of-The-Border Chicken & Pasta Skillet
I have picky eaters in my house. For instance, my husbands has more dislikes than likes. I guess that goes for my kids too. My husband really only likes chicken, pasta, Mexican food and similar items that a small child would like. Therefore, cooking for him can be a bit of a challenge.
The recipe I made last night for South-of-the-Border Chicken & Pasta Skillet incorporated all the flavors he likes. It is a very child friendly. :)
South-Of-The-Border Chicken & Pasta Skillet (Serves 4)

Ingredients:
2 cups medium-shaped pasta, uncooked
1lb. boneless skinless chicken breasts, cut into bite-size pieces
1 jar (16 oz.) salsa
1 pkg. (10 oz.) frozen corn
4oz. (1/2 of 8-oz. pkg.) cream cheese, cubed
1/4 tsp. ground cumin
1 cup Mexican style shredded cheese, divided
Directions:
Cook pasta as directed on package.
Meanwhile, cook and stir chicken in large nonstick skillet sprayed with cooking spray on medium-high heat 6 min. or until done. Add next 4 ingredients; mix well. Simmer on medium-low heat 6 min. or until cream cheese is melted, stirring occasionally.
Drain pasta; add to chicken mixture in skillet with 1/2 cup shredded cheese. Simmer 3 min. or until cheese is melted, stirring occasionally. Top with remaining shredded cheese; cover. Remove from heat. Let stand until cheese is melted.
I, of course, added Cholula hot sauce to mine but you can adjust the spices to your taste.
After dinner was done and everything was cleaned up, I went over to Lisa’s house to watch The Bachelor. My husband made a funny comment before I left. He said, “If our grandparents or great-grandparents saw what we were watching on T.V., they’d be very disappointed.” Very true.
Anyhoo….I love me some Bachelor and love watching it in my friends in Lisa’s theater room. I also loved enjoying some wine and snacks while watching too!
My breakfast was this morning was almost the same as the day before. This time the yogurt was different: Trader Joe’s vanilla Greek yogurt. I used the last of the Cascadian Farms berry granola. I really need to make more of my own granola soon!
I took the kids to school, went to the gym for some cardio and came home to shower. I ran some errands and stopped at Jersey Mike’s for lunch. Yes, I’m obsessed.
