139.8…Chicken & Broccoli Casserole
I have mentioned in the past that a lot of the recipes I make are child friendly. This is because I have two children plus my husband who eats like one.
Last night’s dinner fit the bill pretty well. Kid friendly for sure. Easy to put together. But…like some other kid friendly dishes, it was a bit bland for me. I ended up adding a bunch of hot sauce. This is not unusual for me though.
Chicken and Broccoli Casserole (Serves 4)
Ingredients:

4 ounces egg noodles

2 tablespoons butter

1/2 yellow onion, chopped

1/4 cup all-purpose flour

1 1/2 cups chicken broth

3/4 cup milk
-
1/4 teaspoon cayenne

salt and pepper to taste

2 1/2 cups cooked, shredded chicken breast meat

5 ounces chopped frozen broccoli, thawed

1/2 cup shredded Cheddar cheese

1/2 cup shredded provolone cheese
Directions:
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 6 to 8 minutes or until al dente; drain. Preheat oven to 400 degrees. Grease a 8x8 inch casserole dish.
- Melt butter in a large saucepan over medium heat. Sauté onion until tender, about 3 minutes. Mix in flour. Gradually stir in chicken broth. Slowly stir in milk, and cook, stirring, until sauce begins to thicken. Season with cayenne, salt and pepper.
- Place cooked noodles in the bottom of casserole dish. Arrange cooked chicken in an even layer over noodles. Place broccoli over the chicken. Pour sauce evenly over the broccoli. Combine cheeses, and sprinkle over the casserole.
- Bake in preheated oven for 20 minutes, or until the cheese melts. Remove from oven. Allow to set for 5 minutes.
The next time I make this recipe, I would definitely add more spices. Or just hot sauce! That fixes most anything!
Breakfast this morning was more Coconut-Sour Cherry Granola, Trader Joe’s vanilla Greek yogurt and berries. I kept thinking when I was eating this: “I’ll never buy boxed granola again.”
I took the kids to school and met the girls at the gym. I did an hour of running/walking on the treadmill.
I went to an appointment and then lunch at Urban Plates. Today I went with my favorite salad there: Grilled Wild Ono Nicoise Salad.
I ran some errands and now I’m at Starbucks enjoying a tea while waiting to pick up the kids from school. Tonight is Bachelor night at Lisa’s! It was on last night AND tonight so we are watching all FOUR hours tonight. Is it sad that I’m so excited about 4 hours of Bachelor with my friends!?!
Are you a casserole fan? I’m almost ashamed to admit that I am but they are so easy!! Just dump everything into a dish and bake.
