140.4…Living It Up

Thursday night my husband was working late so I made spaghetti and marinara for dinner.
Friday morning’s breakfast was an egg beater sandwich on a toasted English muffin with shredded cheddar cheese.
I dropped the kids off at school, then picked up Lisa and hit the road for Orange County for a weekend away with my friends. Every year I celebrate my birthday by going to Pelican Hill Resort in Newport Beach. Yes…my birthday is in December but the weather is much better this time of year so that’s why I do it now. :)
Don’t worry….we didn’t forget our Barbies!
We stopped at Starbucks for a latte and then headed straight to South Coast Plaza for some shopping. After a bit, we stopped at Quattro Cafe for lunch.
A little wine and shopping never hurt anyone!
Neither did some prosciutto and arugula pizza.
All the Barbies enjoyed their lunch too!

After shopping we headed over to Pelican Hill to check in. Our room wasn’t ready yet so we enjoyed some time in the lobby bar.
Once we got settled in our room, Alicia made her famous “Pelican Hill cocktail”: Pinnacle Whipped Vodka and sparkling wine.
Not a bad view, eh?
For dinner we ordered room service. Stephanie and I split chicken tostadas…
….and tuna tartare.
We all got ready and went to Landmark for a night of dancing!
We stayed until the place closed and had a blast!
Getting up Saturday morning was a bit rough but nothing a good bagel and cream cheese couldn’t fix.
Then it was time to hit the pool!

Lunch was a BLT and fries.

Eventually it was time to head back to the room to get ready for dinner at Javier’s.

This is the best thing at Javier’s in my opinion.
I ordered shrimp tacos. They were fabulous.
After dinner we came back to the room and chatted awhile before going to sleep.
Sunday morning, Stephanie made bacon and hash browns. I enjoyed half a bagel and some bacon with a mimosa. I had some hash browns after that. :)
Perfect Sunday brunch!
We went back to the pool for the day. Somehow my lunch escaped my camera! I split a tuna wrap and grilled chicken sandwich with sweet potato fries with Annette. Both were excellent.
Eventually it was time to pack up and head back to reality. I really enjoyed the break and time away with my best friends. We always have the best time together.
I drove to my parent’s house….my dad came home from the hospital a few days before! He’s really enjoying being back in his own home after a month in the hospital.
Guess what we had for dinner?
El Pollo Loco! It’s been so long! I had my standard two piece white meat chicken meal with cole slaw but this time I went a little wild and had macaroni and cheese too. :)
This morning’s breakfast was toast with peanut butter.
I’m going to hang out here and have lunch, then hit the road for San Diego. I feel like I haven’t been home in ages!
What was the best thing you ate all weekend? Shrimp ceviche at Javier’s for sure!
