142.6…Speedy Summer Entrees
Since we were childless last night, my husband and I decided to go out to dinner at Samurai in Solana Beach. It’s basically a Benihana type restaurant. The meal starts out with miso soup.
Followed by the standard salad with ginger dressing (which I love).
For my entree, I ordered the mahi mahi with steamed rice.
We always get extra onions. :) I didn’t finish all the fish but I made a pretty good dent in it. We had to wait awhile before our food was prepared so they gave us a fried brownie sundae on the house. I did not touch it. I was a bit jealous when my husband proclaimed how good it was.
This morning was extremely leisurely. No kids to get up and dressed. I slept in a bit, got dressed and made some scrambled egg beaters before heading out the door.
Today I had a cooking class at Great News! It’s been awhile since I’ve been to class so I was extra excited. Today’s class was “Speedy Summer Entrees” taught by Phillis Carey.
The first recipe was Indian Spice-Rubbed Grilled Flank Steak with Tangy Garam Masala Sauce:
Holy yum….the sauce was incredible! Usually I love anything with garam masala in it. The sauce would be great on chicken too!
The second recipe was Pacific Rim Chicken Burgers with Ginger-Lime Mayonnaise.
Another winner! The chicken burgers were basted with a mixture of teriyaki sauce and honey during the grilling. You could make these with ground turkey too.
Next up was Blackened Chicken Breasts with Cajun Tartar Sauce.
The sauce is what made this. The rub on the chicken had a kick to it. The tartar sauce had pimento stuffed olives in it and I didn’t mind it at all. :)
The next recipe was Grilled Halibut with Fresh Pineapple Sambal (Spicy Relish).
I expected not to like this one because of the pineapple. I actually didn’t mind it at all! It wasn’t my favorite dish but the pineapple surprisingly complimented the fish.
Dessert was S’mores Cookie Bars with Marshmallow Crème and Milk Chocolate Filling.
How could this possibly be bad!?! It wasn’t! Seriously….this dessert rocked. You will definitely be seeing this again soon!
Right now I’m blogging away at Starbucks while waiting to pick up my daughter from the camp bus stop.
