143.2…Cranberry Pecan Granola
Ever since I ran out of my beloved Coconut-Sour Cherry Granola, I’ve been dying to make more granola. I came across a granola recipe from a friend that I’ve been wanting to try and yesterday turned out to be the perfect day to make it!
Cranberry Pecan Granola
Ingredients:
4 cups rolled oats
1 cup unsalted pecans
1/2 cup maple syrup
1/2 cup canola oil
1/4 cup packed light brown sugar
1 tsp vanilla extract
3/4 cup dried cranberries
Directions:
Preheat oven to 250 degrees. Line a baking sheet with parchment paper. Set it aside.
In a large bowl, mix together the oats and pecans. Set it aside.
Put the maple syrup, brown sugar and oil in a small saucepan. Bring it to a boil over medium heat. Remove the saucepan from the heat and add in the vanilla extract. Stir.
Pour the hot mixture over the oats and pecans and stir everything together with a spatula. Spread the granola onto the baking sheet lined with parchment paper.
Bake the granola at 250 degrees for 1 hour and 15 minutes. Occasionally stir the granola throughout the baking time. Once the granola is done baking, put it into a large bowl. Add the dried cranberries and stir them in. Let the granola cool completely then put into an airtight container.
It’s a really good, basic granola! I’m glad to have homemade granola back in the house!
We decided to do a little grilling for dinner last night.
Chicken kabob, corn on the cob and baked beans. Delicious!
I couldn’t want to eat my new granola this morning for breakfast. I paired it with vanilla Chobani yogurt and mixed berries.
I really enjoyed the granola. I’m not going to lie….I prefer the Coconut-Sour Cherry Granola but this one is still good.
I took my daughter to the camp bus, then hit the gym for Cardio Muscle class. I ran a bunch of errands with Lisa and then we stopped at El Pollo Loco for lunch.
Two piece white meat chicken, cole slaw and salad. Mmm, mmm good!
Tonight my daughter is staying over at a friend’s house. With my son at camp and my daughter at a sleep over, it sure is quiet over here!

I will have to try your sour cherry one time. Home made granola totally trumps store bought.
