143.0…Cabo!
Thursday night’s dinner rocked. I made this amazing sauce for salmon and ate it with brown rice and broccoli.
I can’t wait to share the recipe with you soon!!
Friday morning’s breakfast was pineapple Chobani, Cranberry Pecan Granola and strawberries.
My husband and I dropped the kids off at the camp bus then headed to the airport for our flight to Cabo to celebrate our friends Saar & Kristie’s birthdays!
We ate lunch at the airport. I ordered a BLT and fries. It wasn’t very good. :(
We finally arrived to our villa and got settled and met everyone.
Not too shabby, eh?? :)
I immediately dug into the guacamole, pico de gallo and chips that the villa chef put out.
I think I ate my weight in guacamole while I was there.
We hung out by the pool for the rest of the day until dinner was ready. We enjoyed a buffet of steak, chicken, fish and salad.
Dessert was Tres Leche cake and ice cream.
Saturday morning there was a delicious spread for breakfast.
I had some eggs, potatoes and bacon.
And the most delicious huevos rancheros I’ve ever had.
The rest of the day was spent by the pool. I wasn’t complaining!
We all got ready and headed out to Edith’s for dinner.

Our meal started with a tostada appetizer.
Followed by the most amazing table-side Caesar salad that I’ve ever had.
I ordered the Baja Shrimp for my entree. Amazing.
And, of course, dessert: Chocolate Lava Cake.
After dinner, we went out dancing for a bit, then headed back to the villa.
Guess what we did all day Sunday?
More pool time!
I did eat breakfast and lunch but can’t seem to find the pictures anywhere. I basically just ate more guacamole with whatever I could find to dip in it. :)
We had a fun dinner in the villa that evening. It all started with a fabulous tortilla soup.
Next was a green salad:
Followed by the biggest prime rib I’ve ever seen.

Breakfast yesterday morning was pancakes and bacon.
Then it was the moment we all had dreaded….it was time to pack up and head home. The fabulous party was over. Waahhhhh!

And guacamole. Not, I was not sick of it yet.
The food at the airport sucked. Boo.
We finally made it home, grabbed the kiddos and went to Pei Wei for dinner. I wasn’t very hungry so I just had the Thai Wonton Soup.
Breakfast this morning was a toasted English muffin with peanut butter and a half of a grapefruit.
I went to spin class and got my butt kicked. We did high intensity interval training and it was HARD. Guess I deserved that after the indulgent weekend I had. :)
What is one food that you could eat over and over again and never get sick of?
I want to go to there.
