142.8…Creamy Italian Dressing
When I went to make lunch today I wanted a salad but realized that I wasn’t excited about any of the salad dressings in my fridge so I made my own.
Creamy Italian Dressing (Makes 1 1/2 cups)

Ingredients:

1 cup mayonnaise

1/2 small onion

2 tablespoons red wine vinegar

1 tablespoon white sugar

3/4 teaspoon Italian seasoning

1/4 teaspoon garlic powder

1/4 teaspoon salt
-
1/8 teaspoon ground black pepper
Directions:
- In a blender or food processor, combine mayonnaise, onion, vinegar, and sugar. Season with Italian seasoning, garlic powder, salt, and pepper. Blend until smooth.
It tasted just like the creamy Italian dressings that you order in restaurants. I love how simple making your own dressing is!
Last night I took the kids to Pei Wei for dinner. I ordered the kid’s size honey shrimp on brown rice with veggies.
I loved waking up this morning with no where to be and nothing that had to be done. What a luxury! Breakfast was pineapple Chobani, Cranberry Pecan Granola, strawberries and blueberries.
I did end up “doing stuff” today: bills, email, laundry, etc. Lunch was Greek Quinoa Salad with chopped chicken and a salad with the delicious Creamy Italian Dressing.
Tonight we have a “couples mixer” in our neighborhood. Everyone brings a hearty appetizer and a bottle of wine to share. It’s always a good time!
