143.0…Greek Quinoa Salad
I really enjoyed last night’s dinner. It was filling, delicious and good for me too. Feel free to play around with the veggies in this Greek Quinoa Salad.
I served it alongside grilled chicken breasts but it would be tasty on it’s own too!
Greek Quinoa Salad (Serves 4-6)
Ingredients:
4 cups cooked quinoa, cooled to room temperature
1/4 cup olive oil
2 Tbsp lemon juice
zest of 2 lemons
2 tsp red wine vinegar
2 tsp minced garlic
dried oregano to taste
salt and pepper to taste
2 roma style tomatoes, diced
1 cup diced cucumber
1 cup diced red bell pepper
6 oz. feta cheese
Directions:
Make a lemon vinaigrette by combining the olive oil, lemon juice & zest, vinegar, garlic, oregano, salt & pepper.
Toss dressing with cooked quinoa, diced tomatoes, diced cucumbers, diced red bell pepper and feta cheese.
This morning’s breakfast was scrambled egg beaters, diced turkey, salsa and a half of a grapefruit.
I went to a school meeting at Starbucks so I grabbed my favorite Skinny Vanilla Latte.
I went to Cardio Muscle class and had a great workout. You know you’re going to be sore when you leave the class with already sore muscles.
Next was errand running and a quick stop at Subway for lunch.
Turkey and ham with avocado and lots of veggies.
I just got back from taking the kids to see the movie “Planes”. It was cute. :) Enjoy your Friday night!

Welcome back! I love quinoa. I cook quinoa in chicken stock instead of water. This makes the quinoa so flavorful. ENJOY!
