143.4…Gluten Free Granola
I have become obsessed with homemade granola. Since I ran out of the Cranberry Pecan Granola, I needed a new one! I found one on MM&L’s YouTube channel that I had to try. By the way…check them out….they give the BEST beauty/diet tips!
Gluten Free Granola
Recipe from MM&L
Ingredients:
3 cups old-fashioned oats
1 cup sliced almonds
1 cup chopped pecans
2 Tbsp flax seeds
2 tsp. cinnamon
2 Tbsp water
1 Tbsp vanilla
1/4 cup apple sauce
1/3 cup honey
1 cup dried fruit of your choice
Directions:
Mix all dry ingredients together, then in a separate bowl mix all wet ingredients together. Fold wet into dry until well incorporated, spread in a thin layer on baking sheet and bake at 300 degrees for 18 minutes, remove and stir/flip and bake for 18 minutes more.
Once baked, add 1 cup dried fruit.
I love how there’s no oil in the recipe! It smelled amazing while it was baking. It turned out pretty good! I’m not going to lie and say it’s my favorite granola in the world but it’s pretty darn tasty for being a healthier version!
Last night’s dinner was an attempt to use up stuff in the fridge. Greek Quinoa Salad, grilled chicken and a big salad with Creamy Italian Dressing.
This morning was fabulous. The kids slept in so I slept in. I enjoyed some coffee before trying out my new granola on some pineapple Chobani yogurt with berries.
I did random stuff around the house before it was time to make lunch. I used up the rest of the grilled chicken in a chicken salad sandwich and the rest of the Creamy Italian Dressing on a salad to go with it.
So….I just finished up a dessert that I’m bringing to Alicia’s house tonight (we are having dinner there) and I’m not a big fan. :( Can’t decided if I’m sharing the recipe or not….
