142.4…48 Hours of Awesome Eats
I had so much awesome food in Las Vegas this past weekend. Not sure why the scale is reflecting the damage I did…..
Before boarding my flight on Friday, I grabbed a ham and fontina cheese sandwich with a bag of Pop Chips to eat on the plane.
I enjoyed it with some wine and a game of Candy Crush.
After we arrived, we checked into our hotel, the Palazzo. A bit later, we decided to grab a snack at the Grand Lux Cafe while we waited for our friends to arrive.
I split Spinach Cheese Dip and Buffalo Chicken Rolls with my husband. I dominated the rolls. They tasted just like hot wings. It took all my might not to eat them all. I came pretty close.
I enjoyed some more wine with my snack.
Our friends finally arrived. We hung out and made our way to dinner at Joe’s Seafood, Prime Steak & Stone Crab at Caesar’s Palace.
For a starter, I shared the Alaskan King Crab Legs with a friend.
For my entree, I had the Stone Crab claws.
We all shared a ton of sides. Four Cheese Mac and Cheese (my favorite):

Seriously amazing. What was also amazing were the desserts. Their Key Lime Pie was outstanding.
So was their Gold Brick Sundae. The chocolate hardened on the ice cream.
After the dinner the boys went out gambling and I went to bed. It was already WAY past my bedtime!
We slept in super late on Saturday. Breakfast was a latte from Coffee Bean. Lunch was at The Canyon Ranch Grill in our hotel. My husband and I started with the Lebanese Double Dip (hummus, babaganoush, bagel chips, and lavosh):
I ordered the Old Pueblo Chicken Burger (house ground chicken with Southwestern spices served with jalapeno relish, avocado slices and roasted poblano peppers):
It was really outstanding!
Then it was time to get ready for the reason we came to Vegas: the Mayweather/Canelo boxing fight at the MGM Grand!
Fight time!
Justin Bieber and Lil Wayne walked Mayweather to the ring. I thought it was a bit comical.
Mayweather won. No surprise. Overall, not a very exciting fight but I had a blast!
By the time we got back to our hotel, it was late and I was starving. We ate dinner at Zine at the Palazzo. There’s nothing like some late night Chinese food!
We all shared the Pan-Fried Chicken Pot Stickers:
As well as the Crispy-Fried Vegetable Spring Rolls:
We also shared several entrees. Kung Pao Chicken:

We finished every bit of food on the table. Great Chinese food! Another winner! I went to bed while the guys gambled. It was 3AM at that point!
Sunday morning’s breakfast was another latte from Coffee Bean.
For lunch, we picked up food at the Grand Lux Cafe downstairs and ate it in our room. I had the chicken salad sandwich with a side salad.
Then it was time to head home!
Dinner was quick and easy. Caesar salad:

This morning’s breakfast was scrambled egg beaters and a grapefruit.
I took the kids to school and went to Cardio Muscle class. Lunch will be Wahoo’s today and tonight is HOT WINGS night! Just what I need after the last 48 hours of craziness, right?
As soon as you said you were going to Vegas, I knew you guys were going to that fight!
