143.8…Mexican Bean Salad
One of my favorite summer recipes is my Mexican Bean Salad. Almost every time I barbeque, it’s one of my side dishes. It makes a lot and the leftovers taste great!
Mexican Bean Salad (Serves 8)

Ingredients:

1 (15 ounce) can black beans, rinsed and drained

1 (15 ounce) can kidney beans, drained and rinsed

1 (15 ounce) can cannellini beans, drained and rinsed

1 green bell pepper, chopped

1 red bell pepper, chopped

1 (10 ounce) package frozen corn kernels

1 red onion, chopped
-
1/2 cup olive oil
-
1/2 cup red wine vinegar
-
2 tablespoons fresh lime juice
-
1 tablespoon lemon juice
-
2 tablespoons white sugar
-
1 tablespoon salt
-
1 clove crushed garlic
-
1/4 cup chopped fresh cilantro
-
1/2 tablespoon ground cumin
-
1/2 tablespoon ground black pepper
-
1 dash hot pepper sauce
-
1/2 teaspoon chili powder
Directions:
- In a large bowl, combine beans, bell peppers, frozen corn, and red onion.
- In a small bowl, whisk together olive oil, red wine vinegar, lime juice, lemon juice, sugar, salt, garlic, cilantro, cumin, and black pepper. Season to taste with hot sauce and chili powder.
- Pour olive oil dressing over vegetables; mix well. Chill thoroughly, and serve cold.
I love to serve the Mexican Bean Salad with my Creamy Cole Slaw. They go so well together!
Tuesday night was Bunco at Candace’s house.
I hit up the appetizers immediately, of course!
After mingling for a bit, it was time for dinner. Candace made an incredible salad bar!
All the salad dressings were homemade. I loaded my plate full of salad and all the fixings plus Candace’s homemade ranch dressing.
This was plate one of two. So delicious!

Yesterday morning I had scrambled egg beaters with salsa and asparagus for breakfast.
See the bottle of Cholula hot sauce in the upper left corner? You know I dump loads of that on my eggs. :)
I took the kids to school then grabbed a skinny vanilla latte at Starbucks for my drive to Los Angeles.
I spent the day with my mom helping her go through stuff at her house. She’s going to be moving soon so I’m helping her getting ready for that.
Lunch was a fabulous turkey and provolone sandwich at Jersey Mike’s.
Best sandwich ever.
We worked all day until we were beat. Dinner was at Hamburger Hamlet. I started with the wedge salad.
Followed by French onion soup. Mmmmmm!
We are going to get rolling with the clean up again soon and then I’m going back to San Diego after lunch. Enjoy your day!
