142.8…Creamy Macaroni and Cheese
Last night I went to a neighborhood holiday potluck party. I knew exactly what I wanted to bring. Well….kind of. I couldn’t decide between two dishes so I brought both. Both appeared on my Thanksgiving table and I’ve been excited about sharing one of them ever since. Besides my apple pie, this recipe for Creamy Macaroni and Cheese is a family favorite.
Creamy Macaroni and Cheese (Serves 12)
Recipe Adapted from Paula Deen
Ingredients:
2 cups uncooked elbow macaroni (an 8-ounce box isn't quite 2 cups)
4 tablespoons (1/2 stick) butter, cut into pieces
2 1/2 cups (about 10 ounces) grated sharp Cheddar cheese
1 eggs, beaten
1/2 cup sour cream
1 (10 3/4-ounce) can condensed Cheddar cheese soup
1/2 teaspoon salt
1 cup whole milk
1/2 teaspoon dry mustard
1/2 teaspoon black pepper
Directions:
Boil the macaroni in a 2 quart saucepan in plenty of water until tender, about 7 minutes. Drain.
Microwave butter and cheese until melted. Stir to combine.
In a slow cooker, combine cheese/butter mixture and add the eggs, sour cream, soup, salt, milk, mustard and pepper and stir well. Then add drained macaroni and stir again. Set the slow cooker on low setting and cook for 1 hour, stirring occasionally.
It’s a hit with children and adults too!
Breakfast yesterday before the party was the last piece of Smoked Salmon Frittata and some fruit.
Eventually it was time to head over to Alicia’s house for our annual “Ghetto Turkey Bash.” Strange name….yes. The premise is you come over and eat a fancy meal is your casual clothes. It’s super relaxed….last time we did it we all came in our track suits!
We all enjoyed some drinks and appetizers before the big meal was served.
Alicia and I put the finishing touches on everything and then it was time to eat!
It was a potluck so everyone was to bring a dish that went along with your traditional turkey dinner.

It was tempting to go back for seconds but I decided to save room for dessert instead.

Breakfast this morning was blackberry (store was out of pineapple) Chobani yogurt, Easy Granola, strawberries and raspberries.
After I dropped the kids off at school, I went to Cardio Muscle class then ran errands. Lunch was a turkey sandwich (with leftovers from yesterday’s party’s turkey), veggies and ranch dressing.
Tonight is going to be taco night over here. Always a winner in my book.
