143.4…Grandma Ople’s Apple Pie

One of the most requested recipes of mine at Thanksgiving is the recipe for “Grandma Ople’s Apple Pie.” I got the recipe off Allrecipes.com, changed a few things and have since perfected it.

Grandma Ople’s Apple Pie (Serves 8)

Recipe adapted from Allrecipes.com

Ingredients:

  • 1 recipe pastry for a 9 inch double crust pie

  • 1/2 cup unsalted butter

  • 3 tablespoons all-purpose flour

  • 1/2 cup white sugar

  • 1/2 cup packed brown sugar

  • 1 teaspoon cinnamon

  • 1 teaspoon vanilla

  • 1/4 cup water

  • 6-8 Granny Smith apples - peeled, cored and sliced

Directions:

  1. Melt butter in a sauce pan. Stir in flour to form a paste. Add white sugar, brown sugar, cinnamon, vanilla and water; bring to a boil. Reduce temperature, and simmer 5 minutes.
  2. Meanwhile, place the bottom crust in your pan. Pour most of sauce over apples, reserving some to brush the top of the pie. Gently stir to cover apples. Fill crust with apples, mounded slightly. Cover with a lattice work crust. Gently brush the sugar and butter liquid on the crust.
  3. Bake 15 minutes at 425 degrees. Reduce the temperature to 350 degrees, and continue baking for 35 to 45 minutes.

Friday night’s dinner was Beef and Mushroom Ragu with Fettuccine leftovers.

This sauce is seriously amazing. I think I need to make it again this coming week.

Breakfast yesterday was Smoked Salmon Frittata with fruit.

The frittata heated up really well!

The day was spent doing laundry and random stuff around the house. Lunch was a turkey sandwich, veggies and ranch dressing.

I got dressed for a holiday party for a group my husband belongs to. It was held in the new library in downtown San Diego. We enjoyed some passed appetizers before sitting down for dinner.

Today I’m attending a neighborhood holiday party. It’s a potluck and I couldn’t decide between two dishes so I’m bringing them both!

  1. That pie looks so pretty Melissa! Great job! Nope, no parties this year except my office lunch party and when my brother comes into town - can't wait to see him! Hope I don't have to work too much at my second job over the holidays so I can spend time with him! :D
