141.8…Three Cheese Orzo and Spinach

I have another winning recipe to share with you: Three Cheese Orzo and Spinach.

It's a great side dish and could go with almost anything!  I served it with chicken and broccoli.

Three Cheese Orzo and Spinach  (Serves 4)

Slightly adapted from How Sweet It Is

Ingredients:

1 cup orzo pasta

2 tablespoons olive oil

1/4 cup chopped onions 

3 cloves garlic

2 ounces goat cheese

1/3 cup parmesan cheese

1/3 cup grated cheddar cheese

1 6-ounce bag of spinach

Pinch of nutmeg

Directions:

Boil water and cook pasta according to directions.

While orzo is cooking, heat a skillet on medium heat and add olive oil. Add chopped onions with a pinch of salt and sauté until soft, about 5 minutes. Add garlic and spinach, cooking until spinach wilts.

Drain pasta and add to spinach and onions. Stir in cheese, mixing until melted and combined. Add nutmeg and stir. Season with salt and pepper if desired. Serve as a side dish or as a base for another pasta mix.

Awesome recipe. You really good add in any veggies you want! I really loved the spinach in it.

Breakfast yesterday morning was a toasted English muffin with peanut butter and half a grapefruit.

After I dropped the kids off at school, I went to Cardio Muscle class. Lunch was skinny fish tacos at Wahoo's.

I volunteered a bit at the school, then brought the kids home. They really wanted McDonald's and I knew we wouldn't be eating dinner until later, so I picked them up a snack. By the time we got home, there were three McNuggets and a few fries left. I could not help myself. I had to eat them. They were calling to me. :)

We went to my son's basketball game (they won again!) and then to a friend's house for dinner. We had a great dinner of orange chicken, rice and asian salad.

My son spent the night there and I brought my daughter home and we went to bed.

This batch was with goat cheese and green onions. Delish!

I picked up my son and we came home to have lunch. I had tuna salad and celery.
