140.8…Herbed Chicken and Tomatoes
I recently ripped a recipe out of a magazine that I really wanted to try. I finally made it last night.
I had all the ingredients on hand. No need to run out to the store. Major plus. And it was super simple to prepare. Gotta love that!
Herbed Chicken and Tomatoes (Serves 6)
Recipe slightly adapted from McCormick Gourmet
Ingredients:
8 oz. pasta, such as spaghetti or linguine
1 1/2 tsp. dried basil
1 1/2 tsp. garlic powder
1 tsp. dried rosemary
3 Tbsp. flour, divided
1 1/2 lbs. thin-sliced boneless, skinless chicken breasts
2 to 3 Tbsp. vegetable oil, divided
1 small onion, finely chopped
1 can (14 1/2 oz.) petite diced tomatoes, drained
1 1/2 cups chicken stock
2 Tbsp. half-and-half
salt and pepper to taste
Directions:
1. Cook pasta as directed on package. Drain well. Meanwhile, mix seasonings in shallow dish. Reserve 2 tsp. Stir 2 Tbsp. flour into remaining seasoning mixture in dish. Coat chicken in seasoned flour. Discard any remaining seasoned flour.
2. Heat 1 Tbsp. oil in large skillet on medium heat. Add chicken in batches; cook 2 minutes per side. Add additional 1 Tbsp. oil as needed. Remove chicken from skillet and set aside.
3. Heat remaining 1 Tbsp. oil in skillet. Add onion; cook and stir 3 minutes or until softened. Stir in 1 Tbsp. flour. Add tomatoes, stock and reserved seasoning mixture; bring to boil, stirring occasionally. Reduce heat to medium low; simmer 5 minutes. Stir in half-and-half. Return chicken to skillet; cook until chicken is cooked through. Season with salt and pepper to taste. Serve with pasta.
We really enjoyed this dish. It would be great with a vegetable or a salad to go with it but I was simply too lazy last night.
Breakfast yesterday morning was scrambled egg beaters with salsa, cheddar cheese and avocado.
After taking the kids to school, I went to Cardio Muscle class. Then I ran some errands and came home to make lunch. Tuna salad, veggies and ranch dressing.
Breakfast this morning was the same as yesterday except that the avocado is a little more tired looking.
After I dropped the kiddos off at school, I went to a meeting, followed by an hour at the gym. I'm trying to get back on a workout routine.
I had to run an errand and decided I wanted a salad so I stopped at Daphne's which was nearby. I ordered their Greek salad with grilled chicken.
It was underwhelming. I'm so used to Luna Grill and Marketplace Grill that nothing compares. Oh well.
How do you organize recipes that you tear out of magazines, print from the internet, etc.?
