141.0…Silpat vs. Parchment Paper
Thursday night I met a few friends at Davanti Del Mar. We were supposed to go to a different restaurant but plans got changed so we ended up at Davanti. I don't mind…they have great food! We ended up sharing several delicious dishes.
Shaved Brussels Sprouts with Pecorino Parmesan Vinaigrette:
Eggplant with Pesto and Mozzarella:
Roasted Beets, Walnut Butter, Creme Fraiche and Candied Walnuts:
Focaccia di Recco (Ligurian style baked focaccia with fresh soft cow cheese and honeycomb):
The best thing on the menu, by the way!!! Order extra honeycomb!
Roasted Butternut Squash, Farro, Goat Cheese, Hazelnuts and Watercress:
Pizza D.O.C. (tomato, fresh mozzarella and basil):
Good times and good eats, for sure!!
Breakfast yesterday morning was pineapple Chobani yogurt, Applesauce Granola, strawberries and raspberries.
I took the kids to school then went to Cardio Muscle class. Four workouts this week. A new record. :)
I got my nails done then went to lunch at Luna Grill.
Greek salad with a chicken kabob.
After school pickup, I took my son to an event followed by Pei Wei for dinner. Kids honey seared shrimp on brown rice with veggies:
Breakfast this morning was scrambled egg beaters and cheddar cheese wrapped up in a tortilla, breakfast burrito style.
It was raining most of the day so I spent it during chores around the house. Perfect day to get stuff done!
Lunch was a turkey sandwich, carrots, hummus and a pickle.
Rainy days are also good for baking. FIrst, I baked my favorite Banana Bread. This was followed by Red's Ultimate M&M Cookies. The first batch I baked on a silpat. They came out SO flat!
I tried baking the next batch on parchment paper to see what would happen. Better:
But they ended getting flatter after this photo was taken. Maybe there was too much butter in the cookies? Recipe calls for 2 sticks! I don't understand the science of baking so does someone want to help me out?
I did learn that I prefer baking cookies on parchment paper though!
Why were my cookies flat!?!

You probably added too much fat, and didn't beat the cookie dough enough to let it rise in the oven. Did you add baking powder??

ReplyDeleteI used baking soda. Thanks for the tips. I don't think I"ll use that recipe again. The cookies taste great but they are too flat. :(
sometimes happens if butter too soft? or not quite enough flour?

ReplyDeleteI refrigerated the dough per the recipe. Maybe it was a flour issue?
