141.0…She's Back!
Arnold is back with us for good!
Everyone was so excited that our newest, furry family member is back!
Monday night I had a meeting so dinner was something quick afterwards. Spaghetti & marinara and a Caesar salad.
Yesterday's breakfast was toast with peanut butter and half a grapefruit.
I dropped the kids off at school, grabbed a skinny vanilla latte from Starbucks, then headed to Great News for a cooking class. This class was one of my favorites: "Spring Tea" taught by Phillis Carey. Phillis always teaches some sort of "tea" class and the recipes are great for teas, bridal/baby showers or just appetizers for parties.
There are 3 different recipes on this plate: Shrimp Salad Rolls; Open-Faced Curried Chicken Tea Sandwiches with Coconut and Almond Topping; and Bacon and Olive Cream Cheese and Chive Finger Sandwiches.
I have sort of an obsession with little tea sandwiches. I could probably eat hundreds in one sitting. I wish I was joking. Anyway….all three sandwiches were excellent! If I had to pick a favorite it would be the Bacon and Olive Cream Cheese sandwiches! Crazy coming from someone that doesn't really like olives…although I'm learning to!
The next plate had 2 recipes: Apricot Ginger Scones with Mock Devonshire Cream and Pistachio Raspberry Tea Cake:
Again…both outstanding! The mock Devonshire cream tasted great on both.
The final recipe was Cinnamon Roll Tea Cake:
Basically like a cinnamon bun in a cake form. Fabulous! Another great class at Great News!
After class I met the trainer to get Arnold and took her to pick up the kids from school. They were elated to have Arnold back!
Dinner last night was salmon (salt, pepper and lemon juice) with creamed spinach leftovers from Ruth's Chris.
The kids played with Arnold for hours last night. I think they did a good job pooping her out.
Arnold is also very talented at the art of camouflage apparently.
Breakfast this morning was a repeat of yesterday's.
I took the kids to school, then went to the gym for an hour of cardio and weights. Lunch was tuna salad, veggies and ranch dressing.
Tonight, I am hosting my annual "Swap Party." This is one of the events that I look forward to all year. You clean out your closets, bring all the clothes you don’t want anymore and “shop” through everyone else’s unwanted items. Everyone brings a bottle of wine and a heavy appetizer to share and it is always a blast!
