142.6…Ginger Wasabi Roasted Salmon
I'm slightly obsessed with trying new salmon recipes. My husband doesn't eat fish so as soon as he tells me he's not going to be home for dinner, out comes the salmon.
It's so easy to marinate it or add things to it and it can take on so many flavors. This recipe was a snap to throw together and was so delicious.
Ginger Wasabi Roasted Salmon (Serves 4)

Ingredients:
1/2 cup mayonnaise
1 Tbsp minced fresh ginger
1 Tbsp wasabi paste (see tip below)
4 (6 to 7 oz.) salmon fillets
Salt and pepper to taste
1 cup fresh French bread crumbs
2 Tbsp chopped cilantro leaves
Directions:
1. Preheat oven to 375 degrees. In a small bowl, combine the mayonnaise, ginger and wasabi paste.
2. Arrange salmon on a parchment-lined baking sheet. Season with salt and pepper. Spread 2 Tbsp wasabi sauce over each fillet, covering completely.
3. Toss breadcrumbs with cilantro and divide among the salmon fillets covering completely. Press breadcrumbs down lightly. Bake salmon until cooked through and crumb topping is crisp and golden brown, about 18 minutes.
Tip: Either purchase the wasabi paste or make by stirring together equal amounts of wasabi powder and water.
Here's another tip: I grind up leftover French bread (the ends, day old bread, etc.) and keep it in a bag in my freezer. I pulled out what I needed for this recipe and piled it on top frozen. It's going to cook in the oven anyway!

Hot Wing night!!!! It had been far too long!
Breakfast yesterday morning was scrambled egg beaters with salsa and cheddar cheese.
I took the kids to school then went to spin class. Then it was off to the vet because Arnold has an ear infection. Poor thing.
Lunch was some leftover cole slaw, tuna salad, veggies and ranch dressing. Basically a spin off from the usual.
Last night I enjoyed my new salmon recipe and relaxed at home.
Breakfast today was a repeat of yesterday. Sorry I'm so boring.
After I took the kids to school, I meant to go to the gym. I really did. I just had too much to get done today and was stressing about it so I skipped the gym.
Lunch was a quick "crack chicken" salad at Luna Grill before heading off to a meeting at the school.
Tomorrow we are headed to Louisville, Kentucky for the Kentucky Derby this weekend! Another Bucket List item checked!
