142.0…Asian Salmon
I love it when people send me recipes. Usually it means that they know that it's something I would like.
My friend Sandra was spot on with this Asian Salmon recipe that she sent me. It was delicious and incredibly easy. You probably have all the ingredients on hand already. You probably should make this tonight.
Asian Salmon (Serves 4)
Recipe adapted from Dr. Oz
Ingredients:
16 oz. salmon fillets
1 Tbsp ginger
2 tsp. soy sauce
2 tsp. maple syrup
2 garlic cloves
Directions:
Place salmon in a pie plate or shallow dish. Combine remaining ingredients; mix well. Pour marinade over salmon; let stand 15 to 20 minutes. Heat a ridged grill pan over medium heat until hot. Add salmon, discarding marinade; cook 3 to 4 minutes per side, or until salmon is opaque and firm to the touch.
Note: The original recipe contained instructions for how to make brown rice pilaf to go with the salmon. I decided to just serve mine with some roasted asparagus.
Breakfast this morning was scrambled egg beaters again. I threw in some asparagus today.
After I took the kids to school, I went to spin class. This was followed by a trip to Costco, then lunch with my husband at Marketplace Grill.
Grilled Chicken Greek Salad. Never gets old.
We went to the talent show at the school where both my children performed. My son sang an original song with a friend and my daughter did a dance to "Story of My Life" by One Direction. It was beyond cute.
I'm now sitting at Starbucks enjoying a latte until it's time to pick up the kids.
We are going to take the kids out to dinner tonight to celebrate their success.
